The next day - the same airiness, softness and fluffiness (it is difficult to refrain from laudatory epithets)! I strictly followed the recommendations, but slightly missed the temperature at the end of baking, it sharply slipped through 96 and 98 degrees, barely had time. In 30 minutes in the Steba 28 ECO mini-oven, the loaf is completely baked, I will certainly repeat it! Thank you for your work!
