Flatbread with dates

Ingredients

Wheat flour (I have 1c) 400g.
Pressed yeast 8d.
Ghee butter 50g.
Water 240g.
Salt 6d.
Dates 100g.
Sesame seeds for sprinkling

Cooking method

  • Heat water and oil to 37C and complete dissolution of oil.
  • Rub the yeast into the flour with your hands.
  • Combine all ingredients (except dates) with a food processor at low speed for 2 minutes. Leave on for 15 minutes.
  • Knead until the gluten develops on 2nd speed for 5 minutes.
  • Add chopped dates and knead for another 2 minutes to distribute the dates evenly over the dough.
  • Form a ball, grease it with vegetable oil, place in a container and leave in a warm place for 1 hour.
  • After a while, knead the dough, form a ball, cover and leave for 15 minutes.
  • Next, stretch the dough into a cake with your hands, while pressing the sesame seeds. Use your thumb to make holes all over the surface. Cover with a towel and leave for 30 minutes.
  • Heat the oven together with the stone to 250C (230C convection).
  • Before baking, once again deepen the holes with your finger, sprinkle the cake with water, transfer to a stone, reduce the temperature to 220C (200C onvection) and bake until golden brown for 20-25 minutes.
