Girls, tell me what is included in the spice for fish. The fish has already been peeled, cut, and the spices have not been kept track of when they are over. Lots of all sorts of seasoning bags, so there are some ingredients just to know what to add. I don't want to postpone cooking for tomorrow because of such a trifle.
My canning mix will work out, I bought capelin, it turned out to be 700 g, I added herring to a kilogram.
Ru
Even if you add a gentleman's set to the saucepan - black pepper and allspice + bay leaf - it will turn out very tasty. Spices for fish are the same peppers / lavrushka, plus coriander (the fish is friends with him), plus usually kukruma (from it there is practically zero taste, but it gives color). The trick is that simple sets of spices are usually limited to this. I won't tell you about complex compositions of herbs, but, frankly, we don't need them. Only the most persistent aromas can withstand such a stewing time, they are also the simplest ones.
LLika
Ru, I did just that, only without turmeric, and I also found lemon pepper - written specifically for fish. He was thrown there too. The fish has been melting for an hour and a half. m

Braised herring in oil (Multicooker Panasonic SR-TMH 18)
Today I slept for 40 minutes, I see that I am specifically late for work, but I still allotted a couple of minutes to take a picture of the fish, so to speak, in the heat.
I made capelin + herring in oil, so the smell of capelin was decent, no, it smelled not bad at all, but it was still cloying, I had to ventilate the kitchen before going to bed and close the door for the night, it was stewed until 3 in the morning, and then until 7 -mi was heated.
Now one more portion is being stewed, but this one will already be with tomato. There is only one herring in it, the aroma is unobtrusive, it smells of fish with spices. At first I thought that the cartoon forgot to press the start (there is such an experience with cooking omelets). I'm lying on the couch, sniffing, I sent my husband to check, he says a cartoon crackles and smells like fish. I went and looked, as if everything was working and getting ready.
The capelin turned out to be very tasty, but I decided for myself that it should be cooked in the open air, that is, in a warm season.

Elenka, thank you tremendous, went to put +
Elenka
LLika_7, thanks for the photo! The fish turned out good, whole. (y) Capelin is tasty, but so smelly.
I liked the taste more in tomato. Now it's your turn to be.
yara
And if my fish is less than 1 kg, should I reduce everything proportionally?
LLika
IMHO - if the fish is half a kilogram, then it is worth reducing the proportions, and if there is less than 150-200 grams, then you can put a little less salt. And oil for a full portion of fish lila only 3 tbsp. spoons

I bought a multicooker the other day. With a fight (barely persuaded her husband!). First I cooked buckwheat. My husband looked skeptical, grumbled (pancake makers and bread makers are not enough for me, I was obsessed with technology). And then she made mackerel - imagine your husband's reaction! He ate almost the entire saucepan in two days. And this is a man who hates fish. Yes, the recipe is amazing. I will cook, now the fast is going on, I want to diversify fish dishes. I myself really love fish. Now I want to try herring. I understand that you can cook from any sea fish. And from the river, well, the one that men bring from fishing?
Elenka
ArishkaIt's great that my husband was pleased! You can try from different things, people cooked ...
RybkA
By the way, I liked herring more than mackerel, although I really respect mackerel. Yes, and with butter is somehow softer ...

And no one poured liquid smoke there?

You offend the boss! I have cooked fish according to this recipe so many times, and so that I never splash a haze there ?! No, this is not about me!
Anna Makl
Late last night I put mackerel - about 1.3 kg. Today we tried it ... tastefully !!!!
Now I will definitely make some more fish, everyone really liked it. It tasted one-on-one like canned mackerel in oil, only I knew that I had put the fish fresh and thoroughly cleaned it from the entrails, because it was possible not to poke around, but to eat everything. The bones became soft, ate with them
Elenka
Anna Makl, I am very pleased that you also liked the fish! Enjoy cooking and eating!

Lenochka, thanks for the recipe, it's very tasty, now I want to try it with tomato. I cooked in a pressure cooker for 65 minutes. Edible bones

Did you catch herring yourself?
Elenka
Ira, what a beauty! Thank you very much. Eat and taste for health.
I look and "fish fat" is not melted at you at all. Great! Well, purely sardine!

Did you catch herring yourself?

herself, and caught in the METRO. Estimate, they swim in our subway ... in shoals

Yes, Lenuska, she was low-fat, so plump, and I read a lot of butter there in your topic, and poured 2 spoons so that only the pressure was collected (half a glass with water) (I write this to the pressure cookers, if that). That's the advantage of a pressure cooker over a cartoon, you whip? there 7 hours, here 65 minutes ...

shl. this post of mine is not for agitation of pressure cookers, it just so happened ... to tell the realities
Elenka

Aha! and then not yet week To ventilate it from the fishy smell for 3 days.
I want such a fish, it stops the fact that the smell while cooking is just driving crazy until you smell it.

do not need a multicooker? I’m talking about speed, and you’re talking about the smell ... and my cats feel very comfortable with the smell ... they sat in a row, waited, quietly and clicked on someone’s nose

Well, I'm talking about the smell of a multicooker, to emphasize the plus of your way
Maybe you don't have time to smell in your pressure cooker?
I have no cats, no one to please.
SupercoW
and I liked to cook in the slow cooker.
last time I cooked in a cartoon - it was just awful. I couldn't wash the cartoon for a long time. I was terribly upset - the fish was delicious, but I didn't want to cook it at that price. but maybe it's some kind of sensitive nose.
in any case, with the advent of the slow cooker in the house, this fish began to appear frequently on the menu. but the fact that the night is being prepared, and not 65 minutes ... And so what, I'm not standing over her all this time.

Fields, I remember about slowness ... I really wanted to eat current
melrin
Thank you for the recipe, it's delicious, though I stewed it for 4.5 hours, but it's still delicious
Elenka
melrin, thanks for the tip and "+". Glad you like the fish.
Natalia 1108
Elenka, thank you, you are huge, very tasty fish turned out !!!
Elenka
Natalia 1108, for health!
kubanochka
Elenka, thanks for the recipe! Today I did this to pink salmon in a short time for 50 minutes. There was no smell like the herring. It turned out sooooo delicious!
Elenka
kubanochka, thanks for the tip! Herring is indeed a fish with a "smell", I have not tried pink salmon. I believe it's delicious!
AZal
Elenka, thanks for the recipe!

I repeated it with some adjustments in the Moulinex CE4000 pressure cooker with simmering for an hour and a quarter:

AZal, what an appetizing fish you have! Thanks for the report and the photo!
The main thing is how fast it is in your pressure cooker. I envy ....

Thanks for the recipe !!! Very tasty, although I am not a lover of fish, I ate this one with great appetite!

I repeated this recipe (for very fatty fish I reduced the amount of oil) with Norwegian herring, with sardine, with Far Eastern greenling, with pink salmon, and with some kind of sea fish without a head - the name flew out of my head

The most delicious (subjectively) is the rasp. Its sweetish taste brought the dish (considering the relatively long cooking time) closer to delicacies.

But pink salmon in this form turned out to be "not very". She was saved only by the addition of tomatoes and onions and stewing to the level of "canned fish in tomato"
vernisag
After reading, choking with saliva, I rushed to the store for fish for the night looking ...: o I bought a rasp, herring and mackerel were not in our convenience store. Of course, I already put everything in the pressure cooker, but still the question is, 1 kg of fish. already without heads, that is, cleansed? And then I have from two fish 1kg 600g only 820g left after cutting off the heads, tails, a glass of caviar and skinning Having weighed my head, I broke how much salt to put? I put it according to the recipe, I hope I didn't overdo it ... I'll check it in the morning.
AZal
vernisag, the skin could not be removed - it would be more weight
vernisag
Yes, I was not going to take it off, she fell off herself as she began to clean ... But with the salt everything went fine, thanks for the recipe!
Elenka
but still the question, fish 1 kg. already without heads, that is, cleansed?
vernisag, Irina, I indicated the fish in the recipe as "carcass".
The herring has a small and empty head, the cat also cried innards, the weight loss is no more than 200 g in the honed one.
We must look at the breed.
By the way, after stewing, the skin of herring turns out completely, very thin, but gives a very appetizing look to the finished fish.
I'm glad your fish tasted normal.

Thanks for reading my recipe!
vernisag
Thank you so much ! Elenka and where is the carcass written? I didn't find it ... well, yesterday it is clear, saliva came very close to the brain, and today I did not find it ...

Strange ...
Everything is clear, it seems to me.
"Fresh frozen fish - 1 kg" - this is the "carcass", the whole herring is frozen. Further in the text is the method of cutting "carcasses".
If a peeled fish or fillet was taken, then she must have indicated it in the recipe, and emphasized it in cooking.
This is what everyone usually does.

By the way. HAPPY BIRTHDAY IRINA!
vernisag
Thank you!

Elenka! Thank you very much for the recipe! I ate half hot, the rest barely endured. I cooked horse mackerel, my husband brought from the watch without guts and gills. She extinguished whole (she is small) with heads and tails for all 7 hours. Delicious! The ridges and heads were not felt at all. The cat also gives thanks and best wishes - we ate it together. We are waiting for daddy with the next catch and preparing him to buy a freezer in the radio room on the drilling rig so that he can bring more fish: girl_skakalka:
Elenka
Zhenya. for good health! It's great that your fish is still caught! I was really jealous ...
It's nice that you liked the fish according to this recipe!
Natusichka
Lenochka, So I, finally, made a fish according to your recipe, made mackerel, and my husband and I really liked it, next time I will do it with tomato filling (I generally love everything tomato!), so help yourself!

Elenka
Natusya, beautiful fish! Thanks for the photo!
Will you show it in the tomato later?
Natusichka
Helen! Of course I will! How not to show ?! If only the taste could be conveyed !!! In a tomato, it's generally OUT !!!!
🔗
The taste is purely canned food for you, but very high quality, expensive !!!! I recommend to all!
