Horseradish powder

Ingredients

horseradish powder 3 tbsp. l.
salt pinch
sugar 1 tsp
sour cream, lemon juice, water with citric acid

Cooking method

  • You can make table horseradish from horseradish powder almost instantly. To do this, add a little salt to the powder and add a teaspoon of sugar, little by little add cold water with lemon juice or acid and a spoonful of sour cream until the consistency of gruel. In 5-10 minutes the horseradish is ready! But first you need to make this very horseradish powder. This is not difficult. Clean fresh horseradish roots well with a stiff brush, scrape with a knife and rinse. But this must be done as quickly as possible so that the horseradish does not run out of steam. Do not wet the roots too much so that the horseradish does not collect a lot of water. Then cut the horseradish into particles no more than 5 cm thick and dry until crisp at T = 50 * C. I dried in the dryer "Veterok 2" for 3 hours. Grind the pieces immediately in a coffee grinder to powder. Store the powder in a tight-fitting jar.

Horseradish is a spicy-aromatic perennial herb 1.3-1.5 m high with a fleshy long root vegetable with thin lateral roots, a rosette of large basal whole leaves (stem pinnately-separated) and small white flowers in a multi-flowered inflorescence-brush. Homeland - Southeast Europe. Cultivated in many countries of the world; in Russia - everywhere. Horseradish contains water, nitrogenous substances, fiber, up to 100 mg% vitamin C, essential oils, phytoncides; has a pungent smell and taste (due to the presence of a mustard glycoside - sinirgin). They eat horseradish roots (seasoning for meat dishes, sausages); leaves and roots are used for pickling and pickling tomatoes, cucumbers, mushrooms; the roots added during sauerkraut contribute to better preservation of its quality and vitamin C.

Grated horseradish is a traditional Russian spice. It stimulates the appetite, promotes digestion, and improves the taste of food. However, it should be remembered that horseradish in large quantities irritates the mucous membrane of the stomach and intestines.

Horseradish is easy to cook at home. It is rubbed on a fine grater (this is easy to do if horseradish is left overnight in cold water), poured with cold boiled water (water should be twice as much as horseradish) so that the grated mass acquires the consistency of thick sour cream, add salt, sugar and lemon acid to taste and let it brew for a few minutes. You can use sour cream or lemon juice instead of water. This will make the horseradish softer, more aromatic. You cannot replace water and lemon juice with vinegar; it coarsens horseradish, and sometimes eliminates its natural pungency. Horseradish is harvested in late autumn before frost or in spring. Store at temperatures from - 1 ° C to + 1 ° C, sprinkled with dry sand or dry peat chips.

I did horseradish only for the second time in my life, before that I often bought ready-made from grandmothers in the market, my husband loves it very much. This year, this recipe caught my eye, I immediately identified it in the bookmarks until the fall. At first, my husband snorted like what kind of hell is this with sour cream, it will turn out garbage! (He only ate with tomatoes before.) But I still decided to do it with tomato as he wanted and a little sour cream for a sample. There was not much horseradish, so I didn't dry it, but immediately made it with fresh. The husband began to taste in a day. With tomatoes, a can of 0.25 ml left at a time, because it was not yet infused and not sharp (by the way, the second one was the same on the 4th day, it was nuclear!). But with sour cream, horseradish was very spicy the next day!
An order came from my husband - the recipe with sour cream should be immediately added to favorites and immediately cooked from the entire amount of horseradish that is available !!!!
Now I plan to get hold of more horseradish and dry this one in Isidri! Thanks again!
