As far as I know, bread crumbles much less if there is a sufficient amount of acid in the dough, which is given by the sourdough or sour / old / ripe dough. if you really don't want to bother at all, try replacing 1 tablespoon of liquid in the recipe with the same amount of vinegar, apple cider, for example. Should help. Of course, I am not a super baker, so, if anything, the mayors of bakery will correct me.

Whole grain flour is heavier than purely bleached wheat - therefore it is better to choose for it the Cereal bread mode at 4.20 hours, and you can bake it on the Main (basic) mode at 3.20-3.50
