Panifarin is essentially a wheat flour concentrate. It is added to the dough if the flour has a low or no gluten content, as in rye flour. It is added to the dough in the amount of 0.5-2% of rye flour when baking rye-wheat bread (respectively, the ratio of rye flour to wheat flour is 20:80).
Gluten makes the dough flexible, elastic, facilitates its processing, increases the volume and porosity of bread, prolongs freshness. I bought it in a shop on the street. Lenin, 41. a title like Showroom. there they gave me panifarin and weighed it. I tried it and I really liked it. try it too !!!
