I have the same slow cooker. I bake bread in it often, especially in summer, when it is hot or in the countryside, and from devices - one slow cooker. The bread turns out to be normal, albeit with a white top crust. But she is always the most delicate, and the color - either I mask it, or I do not pay attention.
I think maybe you are baking too much dough? In my recipes, I take no more than 300 g of flour per 200 ml of liquid, and be sure to cover the bread after baking with a towel for about an hour, until it cools completely. It absorbs excess steam, even sometimes I change the towel to a dry one to dry it better.
I bake this volume for 65 minutes, then "sucks" for three minutes with the lid open and take it out.
