Ingredients

Dough
Wheat flour 280 g
Drinking water 150 g
Milk 100 g

Cooking method

  • I really liked Quick Yeast Cherry Pieso I decided to adapt the recipe for savory pies too. The result is such a delicious pie with saury and rice that now I don't even know which one I like better ...
  • Dough yeast bezoparnoe, prepared as follows: diluted milk with hot water, added butter, salt, sugar. After the butter has melted, add the egg, crumble the yeast, mix well until the yeast dissolves and stir in the flour. The dough is fluid, like pancake dough.
  • Quick yeast pie with saury and rice
  • For lifting, I sent it to the microwave, covering the bowl with the dough with foil.
  • In the meantime, I prepared stuffing: boiled rice in a slow cooker almost until cooked, did NOT salt it, because once I already received a salted fish pie because of too salty canned food. I opened a can of saury with the addition of butter, mixed the rice with saury and its liquid. Now add salt to taste if necessary. The filling should taste a little salty, but only a little.
  • I added a flat spoon of potato starch to the filling. Starch may not be needed, look at the consistency of the filling, the juice should not drain.
  • By the time the filling was ready, the dough already looked like this:

  • She settled the dough and proceeded to form the cake: I put about 2/3 of the dough in the mold, gently crushing it on it, without fanaticism, since it is very soft, I distributed the filling

  • Put the remaining dough on top. Sprinkle the grain mixture on top and put it in the microwave for proofing for half an hour.

  • The cake rose well during the proofing, and after baking it "grew" to the edges of the mold. Baked at 180 degrees for about 30 minutes.
  • She greased the finished cake with butter and left it to "rest" under parchment and a towel, without removing it from the mold.
  • The result is a delicious pie with a delicate dough structure and a juicy, but not wet filling. Please go to the table!

2. During the rise of the dough, the temperature practically does not change, which is also a plus.
3. No drafts. And since the house is always stuffy for everyone, and windows open without end and edges, temperature drops and drafts would negatively affect the test, but everything is OK.
In general, I have not invented anything fundamentally new. Others use an oven with a light on for this purpose, but I don't like that.
