Vinegar 9% 1 tsp

Wheat flour 500-600 gr. (depends on the thickness of kefir and additives)
Sugar powder 100 gr.
Separate the yolk from the protein.
Grind the yolk with sugar.
Pour soda slaked with vinegar into kefir, mix and pour everything into the yolk with sugar, mix again, add oil.
At this stage, the workpiece can be divided into 2 parts (I often do this) and add different fillers: mint essence, cocoa powder, melted chocolate, grated apple.

Now, gradually adding flour, knead the dough.
The dough should stick slightly to your hands, if it turns out to be liquid, you can add a little flour, but do not make it too steep. Do not "hammer" the dough, the gingerbread will be tough.
