I make the cream according to the recipe of Rachel Allen from the Sweet Diary program; according to the recipe, put 4 proteins in a water bath, 250 g of sugar. powder and 3 tbsp. l. cold water, vanilla, stir, heat the mixture to 60 degrees, stirring constantly with a whisk, then pour it into the mixer bowl and beat until it becomes a protein cream, the cream turns out to be very tasty and keeps its shape well, Allen decorates cupcakes this way. At the initial stage, I add a pinch of citric acid.
I make half a portion of the cream, from 2 proteins.
