Silyavka, Elena, excellent result!
Just handsome!
M @ rtochka
Today I took out my box of cheeses. I decided to try everything
Immediately I realized that many forgot what I was doing
But nevertheless ... The most delicious are the classics: nuts, cinnamon and sugar. Because there was a batch where it took 50 grams of sugar for 2.5 kg of apples, but they just gave juice. I will obviously eat them myself)))
The coconut flakes are lost, no taste. It's good with cocoa, but the cheese is loose. Spices for coffee are also loosened for an amateur (but there is also pepper present). I did nothing with fenugreek! It dried up and became pebbles again. We'll have to gnaw.
Yes, I liked it with cumin.
Like this
I’ll probably make some more cinnamon. And then, out of greed, I scored an Antonovka for 20 rubles, I must use it!

M @ rtochkathanks for your views on cheese. I never stop saying that we are all different and we all have our own taste preferences.

Well, I don’t know, I don’t know. Here's mine with cocoa, and it's not dry yet.
Apple cheese
Today we tried it, everyone liked it and the consistency is not friable at all. Nice plump cheese.
M @ rtochka
Elena, it is different from the usual, that's what I want to say. It does not crumble, of course not! But without cocoa it is smooth, smooth in feeling. And with cocoa, as it were, a little terry.
In
Silyavka
Dariacan you add a lot of cocoa? Mine is not terry, not even much denser than just without fillers.
M @ rtochka
Yes, maybe a lot. I poured everything and always on my eyes. Somewhere 1 tbsp. l. a kilo of apples is the minimum.
Here is cinnamon per kilo of apples 1 tsp. it's not enough for me, the hunting of taste is brighter

I poured 2 tablespoons, maybe it depends on apples.

So far, I liked the traditional one (with cinnamon. A little) and the one with cocoa + spices for mulled wine. Shop spices. The bag was thrown away, I don't know what is in the composition. The second is something with something! Apples are felt somewhere at the very end ... a hint. But, I think, if there was Antonovka, it would be even more fun! My wife liked it with orange zest. the one where it turned out to be more than necessary (for me). There was such a spicy bitterness. Fresh zest was from two medium oranges and ... last year's, sprinkled with sugar. There ... also no less than two. Probably, from 1 orange to 500 g of peeled apples would be the very thing

My cheese lasted for almost 2 weeks on drying, now I took a sample.
Well, I don’t know, probably, I was expecting something unearthly after reading about the amount of harvested cheese. And I taste like dried apple jam. However, what else could you expect from pure apples with sugar ...
Made with candied fruits, decorated this cheese a little.
I will hardly repeat it.
Girls, I don't want to offend anyone, I just always honestly write my impressions. And before Angela I bow my head that she is looking for such extraordinary recipes that she knows how to light up the entire forum!

This year we have an apple year and Angela's recipe helped me a lot. Made a lot of cheeses. From apples - I cooked juice, made Belevskaya (in a month, I didn't really like it), but the cheese, I'm sure, will be good in a year. For the second year I have had apple marshmallow from the dryer and has not changed to taste, this year I did not make it, it is more convenient for me to make cheese. Most of the cheeses are donated, some are stored. For me, this is a very convenient way to preserve the harvest. Thank you Angela!

And we talked about cheese, but I never put it in the refrigerator. It became so dense, slightly rubbery, or something. In a good way.
It's classic.

And with caraway it is still drying. I tried it - I liked it very much, I don't know which one is more. If you dry it well, then in general it will be super. And the combination of apple and caraway in the aftertaste reminds rye bread. Which is completely black, like the Belarusian or Latvian Zemnieku or Senchu. Whoever worked with rye sourdough - it smells like an apple.)
For some reason I think that the Lithuanians originally had cheese with caraway seeds, and with candied fruits - this is a more modern, modified version.

Girls, I'm glad I like it.

And we all love cheese! I have already said that it acts as a currency for us. The master did not take money for repairing Isidri, he does not need an alcoholic and we presented him with cheese. He said that at first they did not understand, and then they tasted it and did not share it with anyone, they ate everything themselves. And the circle was more than a kilogram. We have a lot of apples, I will still cook cheese, grandchildren are taken away from us, there will be more time, the whole winter is ahead. And there will be no apples next year, we will feast on cheese.
Thank you so much Angela!

This year in the summer I made a lot of cheeses and various. I experimented with all my heart and now we are eating an apple and fresh gooseberry from the base, + dried apricots, + dried cherries, + walnuts, + vanilla. I liked it very much, not dry, tasty, with a pleasant taste and smell. Pure apple with the addition of vanilla and grains of apricot-calibrated and dry dried apricots (dried itself) turned out drier and not as tasty as the one described above.
I do not store it in the refrigerator, I prefer to store it simply in the kitchen drawer.
Angela, thanks again for a very interesting and quick recipe!

And I, too, with gratitude to the author - not even for the recipe (I met him for a long time), but for the inspiration! The recipe was slightly modified: 1. I didn't use sugar at all. 2. I didn’t cook the apples, brought them to softness in the oven, then chopped them with a blender. 3. Evaporation was also carried out in the oven on a baking sheet. 4. The additives were different - candied fruits, dried cherries, cinnamon, pine nuts, dried currants, dried apricots. The cheese turned out to be very tasty, good with any additions, but I liked the one with dried cherries and pine nuts the most. I store it on a loggia, wrapped in cotton fabric. For distribution as gifts I'm looking forward to the New Year))) I will definitely do it next year. Thanks everyone for the experiments and comments!

I chanted a circle of cheese. Once winter has come, it's time to feast on. She treated her husband to a small piece and put it in the refrigerator. In the morning, I was surprised to find that 1/3 of the circle was missing. : oMice don't seem to exist, we live together

I did not think that I would write in this thread, since I am a reader in this thread, not a writer, and forgive me for the many letters.
I didn't make cheese. But I was familiar with the recipes for apple cheese for a long time, I read it in the book "Encyclopedia of Home Canning", 2001 edition. I read it many times, but the recipe was not entirely clear, more precisely the drying technology, and also molding in specially sewn triangular bags. How to sew, whiter is less clear, and drying in basements was not possible for lack of these. And when I saw Angela exposed the recipe, I see a completely uncomplicated technology, where everything is accessible and simply described.
Angela wanted to thank you for the recipe you have presented, though not immediately, which you read and you understand that it is really possible to implement it.
Why am I writing all this ... More recently, I was treated to apple cheese, made a present for the day and I wanted to share my impressions. I had no idea of the taste of cheese and Angela wrote that it was nothing like anything. Moreover, I made Belevskaya marshmallow according to Chuchelka's recipe many years ago and realized that this was not my product at all, partly reminded me of marshmallows, which I have not liked since childhood. I have not tried the pastila, but now I have tried the cheese and I want to say what a wonderful product this cheese is. This is so yummy, and I and my daughter liked the cheese. This is a sooooo delicious treat, however.

VikaThank you very much for your kind words. It is very, very pleasant and important for me.
I hope you can cook it yourself now. It's not too late even now. Apples this year are still very affordable.

Arina127 *, any)

Arina127 *, I noticed that a raw apple is sweet, and when boiled it becomes sour. Therefore, I and many cheese makers add sugar at the end of the boil.
Just the other day I was grating an apple on a medium grater, so it released quite a lot of juice.
When I prepared apples for cheese in September-October, they did not emit so much juice, but it took a long time to boil.
This is me, for your information.

Sour apples are even tastier))) Especially if with additives - dried apricots, raisins, candied fruits ... The sour taste of apples in matured dense cheese is not felt at all.

Oh, I also hid a piece, in some kind of box, I must urgently look for it, otherwise I'll forget it altogether.

So, I found it, it dried well. I cut off a piece, mmm, it's still delicious. You can't even say that from apples. Made with nuts, added a little cashew.
In general, Angelique, low merci for this delicacy. I will definitely do it next year.

Angela, I cook cheese ... Apples were handed out, treated, they ate themselves all winter, and still remained.
Summer cheese lay normally in the box in the hallway.
Now we have a break for cleaning and preparing for the holiday. Today I weighed what I cooked in a month. 22 kg.
Added raisins, nuts, chocolate.
The recipe is very beneficial for me, thanks, Angela!

Wow! Respect!
Last summer I did it with cinnamon and walnuts, with candied fruit, with lemon / orange zest, with vanilla and coconut. Everyone flies away, my favorite with walnut and cinnamon. The plans are definitely with coffee / cocoa.
ang-kay, Angela, thank you many more times for introducing me to such a wonderful recipe!

marika33, worked on a large scale.
I finished the last bite yesterday and sat down to wait for the next harvest of apples.

And I dried my cheese. She was afraid of mold, packed one piece in paper bags and "forgot it before Christmas." Now I put it in plastic bags and periodically sprinkle it with water from a spray bottle. With a couple of thin cheeses, even in the fall, I realized that I was wrong with a thickness (1-1.5 cm), sprinkled and blinded into one. Next time I will immediately make it thicker. I also noticed that apples and nuts in the form of cheese do not cause flatulence, unlike "pure" products. Meoch, but nice.

Girls, do you think you can make cheese with sugar substitutes? Is there sorbitol-xylitol or erythrol?

We finished our last cheese in July. Last year made a total of 17 kilograms of cheese
True, they were mostly from plums.

Hello. Take another cheese maker into your ranks. I found out about apple cheese on another forum, started cooking and something didn't work out very well, I did it in the country, there are no normal dishes and there is no oven either. I began to evaporate in an enamel bowl, evaporated for a long time, and the end of the edge could not be seen, moreover, the mashed potatoes began to burn, I put the unfinished cheese in the mold. And then it occurred to me to look for a recipe on my favorite forum. I am so lucky that I found your recipe. When I read about steaming in the oven, everything went right. Three heads dry, another 6 kg of apples let the juice go, wait their turn in the oven. Thank you very much, how the discussion helps. I am very grateful to everyone. And especially Angela for the inspiration and the theme.
ang-kay
Irina, that's lovely. It turns out that everything is there too) And there is with such developments and details.
And I thought that nobody makes cheese this year. Silence in the subject)
