Girls, I have a question for you again. And how long and at what speed do you knead the dumplings dough? And then I loaded everything a second time, set it to the 2nd speed, wanted to wait 10 minutes (well, like with my hands), I began to hear the crackling. In the afternoon, in my opinion, this was not.
Twig
Tatiana mom, I didn't time it, I look at the bun, how it was formed, and turn it off. Why knead it for a long time? I put the dough to rest, the gluten will develop. 5 minutes of all business seems to me.
Tatiana mom
Twig, Thank you! I just waited 5 minutes and took it out too. And in the afternoon he kneaded it for 10 minutes, already overheated.

I knead the whole dough by no more than 1.
2ka seems to me too fast, the dough throws rather than mixes, and it's a pity for the car. But more - that the dough is tossed. At 1 or minimum - he is so methodically stirring, admiring.
Darkusha
Natusichka, do you mean a sieve attachment? If yes, then there is no such attachment in Russia and it seems not to be expected. I bought 096 six months ago and I haven't found this attachment anywhere
Tatiana mom
Miranda, in the afternoon on 1k I kneaded for 10 minutes .. And in the evening on 2k, what my head was just thinking about. The hook is super duper. He beat it straight, kneaded the dough against the sides of the bowl. I hope I haven't done much harm to the typewriter.

Tatiana mom, the dumpling dough is very steep, the minimum speed (or a little more) is enough for him, and 5 minutes will be enough. I will mix the mines first. 3, then I let the dough lie down for 20 minutes, and then min. 5 I knead. And you didn't harm the car.

I figured out the dumplings, now I can ask about the bread. Please share the recipe for making bread dough in this kitchen machine. Yesterday I did it, it didn't get up.
Tatiana mom, start with plain white: dry yeast - 2 teaspoons; wheat flour - 600 g; salt - 2 tsp; sugar - 2 tbsp. l .; vegetable oil - 2 tbsp. l .; water - 360 g. Pour cold water into a bowl, add flour + sugar + dry yeast and knead the dough min.3 - 5 at minimum speed. Turn off the machine, close the window in the protective cover (so that the dough does not dry) and let the dough lie down for min. 20 - 30. Then comes the main batch at 1 speed min. 12 - 15, spoonful of salt and butter, add at the end of the batch. The purpose of the main batch is to develop gluten. When it develops, the dough will gather around the hook into a bun and clean the bowl with itself like an eraser, the dough will become smooth and silky. Then there is a proofing (40-50 minutes), it can be done in a bowl, then turn on the minimum speed for a few seconds and do a kneading, again a proofing with a kneading, molding, final proofing and baking.
If you need to recalculate this recipe for a different amount of flour (more or less), then divide the desired amount of flour by the original, you get a certain number. It is on him that each ingredient in the recipe will need to be multiplied. If you have compressed live yeast for this recipe, take somewhere about 22 grams. Good luck!
Tatiana mom
Peter Push, Natasha, THANKS very much! She wrote everything down. Now again the problem - there are no scales)) What accurate and reliable ones are on sale?) But I'll try to cook right now.
How long do you bake and at how many degrees? Do you need to put water down the oven?

Girls who exchanged gift tips in mvideo? I still decided to exchange the blender for something more expensive, and then buy it again for bonuses. So I came, and they tell me "bring the car with all the attachments, we will make you a refund and then we will change or pay extra"
Very well. To do this, I need a husband with a car, and I reduced the price for him)) and my blender stayed with me. And when I came home and decided to make a milkshake, it turned out that the lid from it remained at home))

I just recently dealt with weights. But the forum has a topic Kitchen scales
https://Mcooker-enn.tomathouse.com/in...ption=com_smf&topic=420.0
After studying it, she hesitated for a while between Soehnle and Beurer. In fact, Tanita wanted, those who weigh up to 5 kg, but now this model is not in Moscow, and it is not clear when it will be. Beurer chose from the above. They are a little cheaper and have found the optimal size for this brand. I'm happy.
The introductory ones were as follows: a weighing limit of 5 kg, an accuracy of 1 g and a size suitable for weighing a bowl.

Tatiana mom,
Success in bread business does not depend much on the machine.
It is important to understand the basics here, to feel the dough.
The forum has many threads on these issues.
For example, BASICS OF KNEADING AND BAKING.

In general, open the table of contents of the forum topics, see where and what questions are more convenient to ask, and where you can look for useful information on a specific topic.
Please note that many topics also have additional branches.
There is really a lot of useful information on the forum not only on the test, but also on other basics of cooking, housekeeping and just life situations.
And also many verified recipes not only with exact proportions of products, but also with proven technology.
Good luck!
Tatiana mom

Good afternoon everyone
I am asking you for help and advice)
I am choosing a kitchen machine. I need a complete set - a meat grinder, blend, whisk for whipping and kneading.
Two models fit: Kenwood KVC 3170 S Chef and KENWOOD KHH 323 WH MULTIONE
Tell me which one will be better?
The husband says that the MULTIONE model has more attachments. And I lean more Kenwood KVC 3170 S Chef, metal body, nozzles can be adjusted in height. The power is the same for both models. Well yes, the price difference. Kenwood Chef will be more expensive.

nasty25no doubt take the Kenwood KVC 3170 S Chef - power: 1000 W, bowl capacity: 4.6 l, number of drives: 3, stepless speed control, complete set: K-shaped attachment, dough hook, whisk, blender attachment, attachment -meat grinder. This machine in the KM Kenwood hierarchy is higher than the KHH 323 WH MULTIONE, because it is completely metal, which means it is more stable and more reliable in operation, the ability to gradually buy nozzles (there are about 20 of them in the arsenal). In the Kiev store, the difference in price is 1 thousand gr. 🔗... Good luck and the best specimen!

And who ordered nozzles from other countries?
Otherwise, I will bring the car next week, but I just needed headphones, I will take them either in the USA, or what is more likely in Germany
But there delivery is 30 euros and it does not depend on the number of items in the order until a certain moment

So I compared the prices that we have a meat grinder
NOZZLE - MEAT GRINDER KENWOOD KAX 950 - 9900
They have
Kenwood KAX950ME kMix Fleischwolf edelstahl - 65,46 €

nasty25, I am definitely for the KVC 3170.
The Multione series is, firstly, not expandable, and secondly, weaker than any of the individual machines. The nozzles are made of stainless steel, but rather thin.
I had Prospero, a previous version of Multione. I can't say anything bad, I mixed the soft dough very well, the dumplings had to be stirred.
In addition to the harvester attachment with knives, the rest was so-so, and the meat grinder was generally awful (I foolishly sold a separate one when I bought that cache).

In general, I lived with Prospero for a year, then there was an opportunity to take Kenwood Sense and get a bunch of necessary attachments. I still have no regrets, only now I have changed Sense for an induction machine. We managed to save the entire fleet of nozzles.

That is, by buying Chef you will provide yourself with unlimited possibilities of your kitchen appliances in the future, especially since the attachments for the new socket will not disappear from sale for a very long time.

Many people here prefer a 6.7 liter bowl. Here the question is, for me personally, 4.6 liters was very convenient. This is already a matter of family size and cooking volume.

Complete set: K-shaped nozzle, dough hook, whisk, blender nozzle, meat grinder.). While I was thinking, this model is no longer available. I really need attachments - mixer, blender, meat grinder.

I don't have a kitchen machine, to understand a 6.7 liter bowl - is it very large? Is it possible to beat with such a large (I saw it in the store - it is huge, of course) with a whisk for example 2 squirrels?
Family of 4 people, I do not cook in large volumes.

kristi_l2002, Sense and Chef are different series.

nasty25, 6.7 higher by 7 cm, as far as I remember. Yes, the two whites are whipped without problems.
If you cook in small volumes, then 4.6L is a very comfortable option.

Whether the bowl is large by 6.7 liters is a rather subjective assessment. There are as many people as there are opinions. In terms of washing and storage, my 4.6 l suits me for all 100, in terms of operation, so far only for minced meat of this volume, I was not enough, but minced meat for sausages, I do not every day, but for what we do each a day of 4.6 liters is enough for us.
As for the 2 proteins, they whip perfectly, since the whisk is adjustable in height.

nasty25, Kenwood KVL 6370 S Chef XL Elite is higher in class from your chosen one in many ways - stainless steel planetary socket attachments, more power and others. A bowl of 6.7 liters is not at all large, not only 2, but you will also knock down one protein (with KM Kevud, the nozzles fall almost to the bottom of the bowl), but more than 6 proteins will not work out (especially if you make protein-custard) - a blizzard on the kitchen will happen. And strangely, in Kiev on the off-site in the online store, this car is only 1 thousand more expensive than Sens. If the funds allow - take it, there are all the attachments you need today for you.
