Natusichka, suddenly my answer will be useful to you, I made marshmallows in Kesh several times, a couple of times apple (from sour and sweet apples), once currant and once strawberry.I made double portions from the recipe, the triple portion is already trying to escape from the bowl.
The proportions for sour fruit berries are suitable for my taste. For sweets, the sugar was reduced (by 50-100 grams of the total).

A detailed description of the process under the spoiler, I wrote it for colleagues who do not have planetary mixers, incl. for those, it caught fire for the first time to try to make something from sweets myself, so I wrote as I could in detail.
with Kesha everything is much easier at times.

Here are the original proportions
Berry / apple / fruit puree - 125 g
Puree sugar - 100 g
1 protein + pinch of salt
Agar-agar - 5 g
Sugar - 200 g
Water - 75 ml
Powdered sugar for dusting / deboning - 1-2 tablespoons

First, we make berry / fruit puree. Put fruits / berries in a saucepan. Be sure to boil (to thicken) (if made from Antonovka, then it can be baked for 20-25 minutes in the oven), rub through a sieve, weigh so that the volume of the finished puree is 125 grams, add sugar (100 grams) and cook until sugar is completely dissolved. Cool the puree. Better if it stands overnight in the refrigerator. If Kenwood whips, then he whipped me nice and warm.

Beat 1 protein with a pinch of salt, when whipped to the peaks, slowly add the puree in several steps, without stopping whipping. The mass should increase in volume several times.

We put 5 grams of agar-agar + 75 ml on the plate. water, bring to a boil, add sugar (200 grams), cook for several minutes. The syrup must be brought to a temperature of 110 degrees, if there is no thermometer, then to the test "on a thick thread" (the syrup must drain in a continuous thread, but plump).

Pour the syrup into the protein-puree mass in a thin stream, whisking continuously. Beat for a few more minutes (2-4), but not for long, otherwise the mass will thicken and it will be inconvenient to deposit. We take a pastry bag with a nozzle (if not, take a new file / tight bag), transfer the mass (cut off the tip of the file), and place it on parchment paper / silicone mat / non-stick mat. If you wish, you can grease them with odorless vegetable oil (it will be much easier to separate) The size of marshmallows for your own taste. All these "rugs" are best placed on a hard surface (table, baking sheet, tray, plank, etc.).
Agar hardens at 40 degrees, so precipitate quickly.
