Cottage cheese cookies with apples

Ingredients

cottage cheese 5% 180 g
wheat flour 180 g
butter (margarine) 180 g
vanillin on the tip of a knife
rum (optional) 1 tsp
fresh apples 2 pcs.
sugar taste

Cooking method

  • Cut the chilled butter into cubes and grind with flour, cottage cheese and vanilla, you can add a spoonful of rum. Knead the dough (if sticky, add a little more flour). Chill the dough in the refrigerator for 20 to 30 minutes.
  • Wash the apples, peel and cut into thin slices, roll them in sugar. Remove the dough from the refrigerator and roll it into a layer, about 0.3 - 0.5 cm thick. Cut out circles with a glass, put apple slices on one half and cover with the other half, slightly pressing along the edges, dip one side of the cookies in sugar.

  • Spread the cookies on a baking sheet covered with baking paper and bake in a preheated oven to 180C for 25-30 minutes.

It turned out very tasty! Just as I like - juicy, unpleasant - minimum sugar.

The only thing is that I threw 1/2 spoonful of baking powder into the flour over the park. And then I read the recipe - it's not there .... The result is just a softer dough texture.
I put sour apple, kiwi, canned pineapple in the filling. I really liked the apple, my husband liked it with kiwi. I added a little cinnamon to the sprinkling sugar.
The curd was 2% and coarse. In the next. once I punch it with a blender, because the grains that did not disperse during manual kneading, thickened after the oven and mixed a little in the cookies.
I didn't roll out the dough, but took a piece and rolled the balls, which I flattened in my hands - also convenient and compact (while my husband was having dinner next to me, I made cookies).
I will definitely bake some more!
