Gluten Free Rice Flax Bread

Ingredients

Water 250 ml
Milk 50ml
Egg 1 PC
Sunflower oil 12 grams
Flaxseed flour 100g
Rice flour 200 grams
Corn starch 50 grams
Sugar 3 tsp
Salt 1 tsp
Soda At the tip of a knife
Apple (rubbed) 50 grams
Dry yeast 5 grams
Sesame seeds for sprinkling

Cooking method

  • First, in a dough mixer I mixed liquid ingredients, sugar, salt, soda, yeast, apple at high speed. Then I added flour and starch, kneaded in a dough mixer. The gingerbread man turned out to be soft, but not liquid. I designed a loaf and put it in a silicone mold, oiled and sprinkled with sesame seeds. Allowed to distance 45 minutes in a warm oven. I baked for 10 minutes with steam, 50 minutes at a temperature of 140-160 degrees (I have mode 4 in my electric stove) without steam. She took it out, took it out of the mold and baked it for another 10 minutes

Note

Hello! I want to share a recipe for a gluten-free rice-linseed bread. I baked it for friends, they say it's very tasty, they ask for more))

Svetlana, beautiful bread! With the third recipe you
I correctly understood that proofing and kneading (not counting 45 minutes for lifting in a finished product)

It didn't work out. I did it according to the recipe, but I do not have a steam function, so I baked it for 150-60 minutes, it was not baked inside, I put it on and it was not baked at all, inside it is dense, moist, like a brick. It would be interesting to see yours in section. Can this only be done with steam?

Hello. I also do not have a steam function, I put a frying pan with water at the bottom of the oven) I rarely bake it when asked. The crumb turns out to be soft, damp, but not sticky, it does not stick to a splinter. Try a higher temperature (180), all ovens are different. I have an ordinary electric stove, I have adapted to it so much) The bread should turn out. My granddaughter loves him very much (she is not allowed gluten). Please write about the result. As soon as I bake, I will definitely lay it out in a cut. I sincerely wish you good luck !!

Yes, this bread is different. Not at all like a regular one. By the way, it has a shelf life of 2 days. Then cut it up and into the freezer. Take as much as necessary and defrost. I do it in the microwave and airfryer.
By the way, according to the photo, the crumb should be more porous. And soft)
