Then I found a thermometer, put it in the oven, and it shows 120C ... That is, my oven clearly does not pick up the temperature in comparison with the scale. It is better to spread it in small piles, they keep their shape better than large "crap". Do not open the oven during baking. Another nuance - the sugar is supposed to completely dissolve in the mass when whipping (you need to taste it so that there are no grains).

Now I have delivered the second batch, I bake at actual 105C. I'll insert pictures in the evening.
