Ingredients

Brioche 10 pieces
Chocolate ice cream 500 g
Strawberry sauce 5 tbsp. l.
For syrup
Sugar 300 g
Lemon zest 25 g
Cinnamon 1 stick (0.5 tsp)
Dark rum 20 ml
Lemon juice 15 ml
Vanilla sugar 0.5 bag
Water 600 ml
For
Mango puree 300 g
Sheet gelatin 20 g
Cane sugar 30 g
Cardamom 2 boxes
For brioche
Wheat flour 300 g
Durum flour 200 g
Sugar 80 g
Milk 80 ml
Eggs 3 pcs
Butter 80 g
Orange zest 2 pcs.
Lemon zest 1 PC.
Dark rum 20 ml
Acacia honey 20 g
Vanilla seeds (sugar) 1 tsp
Sea salt 7 g
To lubricate brioches
Milk 20 ml
Yolk 1 PC.
Butter for greasing parchment

Cooking method

  • A very common and favorite dessert in Sicily is brioche with a few scoops of ice cream. They are put in brioches cut into 2 parts. This recipe, I think, is a kind of interpretation of the Sicilian bun, more intricate and pretentious.
  • Preparation

  • - Combine all ingredients for the syrup in a saucepan with 600 ml of water, bring to a boil, immediately remove from heat and cool completely.
  • Making "cheese"
  • - For the mango cheese, soak the gelatin in cold water for 10 minutes, squeeze, mix with 50 g of mango puree, sugar and crushed cardamom seeds, bring to a boil. Combine with remaining mango puree and, while hot, spread thinly on parchment or silicone. Refrigerate until solid, cut into 8x8 cm squares and use in an ice burger instead of cheese.

  • Making brioches
  • - For brioche, combine rum, zest, honey and vanilla seeds, tighten with plastic wrap, leave in refrigerator for 2 hours. Soften the butter.
  • - Mix all flour, milk and sugar with a mixer. Add one egg at a time and continue stirring for another 5 minutes. Pour in rum mixture, stir at low speed for 8 minutes. Gradually add soft butter, salt and stir on medium speed for another 10 minutes. Make a ball out of the dough, wrap in plastic and leave at room temperature for 2 hours. Pound, make a ball again and leave to rise in a warm place - the dough should increase by 3 times.
  • - From the risen dough, make balls weighing 70 g. Grease a sheet of parchment with butter, lay out the balls and leave for proofing for 35 g. C until they rise 2 times. Grease the balls with a mixture of milk and yolk and bake in a preheated oven to 180 gr. From 3 minutes. Reduce temperature to 170g. C and bake for another 7 minutes. Cool the buns on a wire rack, then cut in half and soak in the syrup. Place on a wire rack and drain off excess syrup.
  • Build a burger
  • - Crush the chocolate ice cream balls through the parchment with a spatula to form a cutlet. Put ice cream on the bottom of the bun, then the mango "cheese", a couple of tablespoons of strawberry sauce and mint, then put the second half of the bun on top. Serve with strawberry sauce and mango cut into french fries.
