This is how I do it. I pour only water depending on the amount of crusts. And sometimes I cook only 2 times. I try the peel after the second boiling, if there is no bitterness at all, then I don't boil it for the third time.

As a result, my method looks like this:

Then I put it in the microwave, fill it with sugar (the amount is according to the recipe for the syrup) and twist it at maximum power for 2 - 2.5 minutes until the liquid boils away. At first a lot of syrup is formed, but gradually it evaporates. In the middle of the process, add lemon juice to taste - so that it is not cloying.
I usually dry in the kitchen, but this time I spent the night in the kitchen, and then I tried it in the dryer for 1.5 hours at 60 degrees, 1.5 hours at 40. They dried very well and evenly, soft but not sticky. Delicious, almost without bitterness, but with a citrus edge. And beautiful!
