Ingredients

Egg C-0 4 things.
Sugar 4 tbsp. l.
Curd (any) 400 gr.
Semolina 7-8 st. l. with a small slide
Margarine (butter) 150 gr.
Soda 0.5 tsp
Vinegar 9% (lemon juice) 0.5 tsp
Vanillin
Dried fruits optional (washed and scalded) 100-120 gr.

Cooking method

  • I have had a recipe for this semolina cheesecake since my studies at a technical school. Now these are colleges. It was then, in 1989, that we (young students of a trade technical school) started our first notebooks with recipes in production technology lessons. I wrote (then) beautifully and accurately. The notebook is already quite old and worn out, but I keep it and do not rewrite it. This is my story.

  • Semolina cheesecake - (that's how it is written in my book) is a favorite in my family. I especially love to cook it for my skinny children, who do not eat natural cottage cheese well. I share with you, maybe it will come in handy.
  • It's simple. Melt margarine (butter) in the microwave and let cool.
  • I take the most common cottage cheese in packs. A bit damp. But you can take the one you trust. The main thing is to grind it if the grain is very large and the cottage cheese is dry. The pack cottage cheese is already soft, so we just send it to the processor or mixer.
  • Break the eggs to the cottage cheese, add sugar, vanillin, margarine (butter) and semolina. The amount of semolina depends on the moisture content of the curd. 7 spoons go to dryish cottage cheese. Wet 8. Knead the whole mass until smooth. I must say that at this stage I begin to actively eat the dough. It is very tasty. I don't advise ... just repent.
  • Add quenched soda to the already homogeneous mass, stir quickly and briefly. The mass becomes fluffy. Dried fruits are the last. I love raisins and shredded dried apricots here. You can do without them, but children love.
  • You do not need to let the dough insist. Bake immediately.
  • The oven is preheated to 180 degrees. Bake in any shape or mold. It takes a very long time to bake the cheesecake, so I bake it with silicone muffin tins. Readiness is checked with a splinter.
  • Serve with sour cream or syrup. This time I chose raspberry.
