Raspberry ringing shortbread cake

Ingredients

for a mold Ø 28 cm
Flour 225 g
Baking powder 1 tea the spoon
Almonds, ground into flour 100 g
Sugar 125 g
Vanilla sugar 1 sachet

Clove (optional) pinch

Filling:
Raspberry jam 100 g
For lubrication:
1 yolk
1 teaspoon milk

Cooking method

  • Mix flour with baking powder, add nuts, sugar, vanilla sugar, spices, mix. Add egg and white, butter. Knead the dough and refrigerate for 30 minutes.

  • Spread half of the dough on baking paper with wet hands. Brush with raspberry jam, leaving 1 cm free around the edge. Roll the remaining dough into thin flagella, lay out the side and wire rack. Stir the yolk with milk, grease the pie.

  • Bake in a preheated oven at T 180 ° (convection 160 °) for about 30 minutes.

Thanks for the recipe. I was specifically looking for how to use apple jam, so that the dough would not sour. And your recipe fits perfectly. Another part of the flour (50g) was replaced with whole grain. Everything else is unchanged.
