Ingredients

Apples (net weight) 1 kg
Sugar 1 kg
Water 200 g

Cooking method

  • Cored apples, cut into small pieces.
  • Boil the syrup from sugar and water (boil for 10 minutes.)
  • Pour the boiling syrup over the apples, stir, close the lid and leave for 12 hours.
  • Next, transfer the apples with a slotted spoon to another container. Boil the remaining syrup in the saucepan for 10 minutes. Remove the saucepan from heat, return the apples to it, stir, close the lid and leave for 12 hours.
  • Then, the procedure with laying out apples and boiling the syrup can be repeated again.
  • That is, it turns out we boil the syrup three times, and for the fourth time we boil the apples and syrup with the lid open for 20 minutes.
  • This time I did just that, but when time is running out, I pour the syrup 2 times, and boil it for the third time.
  • Next, put the jam in prepared sterilized jars and roll up.
  • I put the finished apples tightly in jars, pressing with a spoon and add syrup to the edge. I close the remaining syrup separately in a bottle, it's more convenient for me.
  • This is my favorite way to make jam. With it, the fruit remains in pieces. So you can cook not only apples, but apples are the most delicious for my taste.

Regarding water, I also try to cook without it, but empirically I still came to syrup with water, since apples are of different juiciness and not always enough juice is obtained. As, for example, in this case I have "wild" apples, they are tart and dry by definition.
