Ingredients

Small melon 800-1000 g
Sugar 50 g
Lemon juice 15 ml
Water 60 ml
Honey 30 ml

  • - Place the sugar, lemon juice and water in a heavy-bottomed saucepan and, stirring occasionally, bring to a boil. Cook for a minute or until sugar dissolves. Let the mixture cool slightly and stir in honey, so we will preserve the healing properties of honey.
  • - Cut the washed melon in half and remove the seeds. Save the juice from the seeds. Gently remove the flesh with a sharp-edged spoon so that the skins of the melon halves are intact. Save seeds for serving. Place the pulp and seed juice in a blender and beat well until smooth.
  • - Then transfer the pulp to a bowl, stir in the chilled honey syrup and place in the freezer or freeze immediately in an ice cream maker.
  • If you are freezing in the freezer, then you need to mix the ice cream several times while it solidifies with a blender to avoid its icy structure.
  • - Dry the inside of the melon skins and store in the refrigerator.
  • - If you freeze ice cream in an ice cream maker, then immediately fill the blanks from melon skins and level well with a knife. And put the ice cream in the freezer.
  • Ice cream, which you make with a blender, must be brought in the freezer to a sorbet state, and then also put into the skins.
  • - Then we do the same. We take out the well-frozen ice cream in the form of melon halves from the freezer and carefully make a false recess in the middle, put melon seeds in it to simulate a real melon, cover with foil and keep in the freezer until serving.
