Coffee ice cream (E. Molokhovets, 1861, recipe No. 1869)

Ingredients

Coffee (natural brewed) 100 ml
Milk (cream) 400 ml
Yolks 3 pcs
Sugar 80 g
Vanillin

Cooking method

  • Make coffee. While the coffee "grows stronger", grind the yolks with sugar until white, add vanillin (vanilla sugar). Combine strained coffee, milk, yolks, heat while stirring over the fire until it thickens. Cool the mass, transfer to an ice cream maker, add chocolate chips during cooking. Bon appetit: flowers:
  • Considering the size of our assistant, I reduced the amount of ingredients, reduced the sugar significantly, it would be too sweet.

Original recipe:

Pour 3/4 cup of ground coffee with water, brew as usual so that 1 cup of strong coffee comes out. Grind the yolks white with sugar, dilute with 2 cups of cream or milk and 1 cup of coffee, stir on the stove until thick, strain, cool, pour into an ice cream machine, cover with clean paper and lid, and surround with fine ice mixed with 6 lbs. simple salt, twirl until hardened. Remove the cover and paper carefully so that the salt does not get into the ice cream. If it turns out to be ready, that is, frozen, take out the metal rod, peel the ice cream from it with a spoon or spatula, smooth it, cover with clean paper and a lid, put it on ice, cover it with fine ice and salt around and on top. Before the vacation, carefully remove the lid and wipe off the salt from the dish, cover with a beautifully folded, starched napkin and a round dish, overturn. If the ice cream does not sink onto the dish by itself, then wipe the bottom and sides of the form with a towel dipped in boiling water and wrung out. Remove the mold carefully.

Issue for 6 people: 3/4 cup ground coffee, 2 cups milk or cream, 4 yolks, 1/2 pound, i.e. a full glass of sugar. You can add 3/4 heads of vanilla. Salt 6 lb., i.e. 12 cups.

I now see how they do it. At the edge of the ice there are five people
with crowbars and start tapping, over and over again. There is a crackling and splashing,
a long ice floe begins to breathe - barely perceptibly sway; grab her
with sharp hooks, they shout drawn-out - "take it! .. pile-up!,." - and
pulled out on the snow, for "battle". Break up with breaking into "sugar", chuck
slide. The empty trucks are taken away. And so - all over the hole, you can barely see ... "
