Flax, and pasteurizing at 80 degrees is just heating up to 80 and keeping how much? That is, no special features and can be heated, for example, in a Shteba without a lid?
It is necessary to bring to 80C and allow to cool very slowly so that the pasteurization process continues for some time. I came up with the idea of doing this in a milk cooker - it cools down in it with the lid closed, well, it just takes a monstrously long time. There is hot water in the walls, so it turns out almost like in a thermos.
You can bring it up to 80C in Shteba, then turn it off, cover with a lid and leave it for at least an hour or two. Let it cool slowly.

Probably if the lid gets trampled, put it aside with a sterile spoon and close it again
The lid did not rip off only because it rested against the lid of the bread machine (I moved it into the bread machine for the proving program, I really needed an Orsonchik)
I removed it with a spoon, a whole glass, pulp, soaped the lid and plugged it back. At night I will move it to the fermenter, there probably will ferment less.
Kokoschka
vernisag, strategist!
The process is rushing, it's great !!!
vernisag
Yeah, part of the rushing process poured into a bread maker, threw out a whole glass of pulp. There will already be nothing to drink, 1.5 liters will probably only remain
Kokoschka
vernisag, it turns out, maybe you need to stand in a refrigerator and pour pure juice without pulp?
vernisag
Yes, it is better to use juice without pulp, but you need much more apples ...
They'll have their own apples, store-bought ones now ...
Elena Tim
I also thought that next time (if, of course, this succeeds) I will peel the oranges and pass them through an auger juicer, the juice comes out of it is not so thick, and straining will not take as long as it took me today. And then the pulp really takes the hell out of how much space in the jar.
Kara
Exactly! I ended up with only 1500 wines
Elena Tim
Quote: Kara
the output was only 1500 wines
Damn, well, how is it drunk ?!

Damn, well, how is it drunk ?!
So you still have to wait, two weeks ..., and there is nothing to drink at all, soooo, lick your lips
Elena Tim
So here I am, and Gru, I'm tired of sitting already sober.

Look, girls, I don't know what's going on, but it doesn't ferment with yeast!
Biryusa
Probably, after all, the reason is in oranges, they grew on some additives. There is also milk that does not turn sour.
Elena Tim
That is, as I understand it, it's easier for me to quit drinking, yes, than to wait for my wine from these "magic" oranges?
vernisag
Flax, put three or four hours on the kvass program, ferment
Elena Tim
Shcha ...

Wapcheto, I'm quite serious

Duc and me. Has already turned on "Kvass".

Elena Tim,

And in a slow cooker? I always pasteurize milk in it.
Elena Tim
So there is a device, Natasha. The point is to pour into a slow lye? Actually, it’s already starting to seem to me that I won’t succeed with this wine. Most likely - to be thrown.
Something is wrong with me with these oranges ...
Scarecrow
Elena Tim,

I stepped in and wrote about pasteurization))). While I finished reading to the end, it turned out that everything was boiling over again)).
Do not be upset, it happens. Instead of fermentation, it grows moldy. We made liquid yeast in the same way. This is the same garbage - you need to ferment the fruit in water. For whom it turns sour, moldy, but for the majority it becomes fertile. That is, according to statistics, mold is possible, but much less frequently than fermentation. So try again. It’s just that you’re unlucky the very first time that you knock your hands off, of course, but don’t get stuck on it. I've already fermented yeast twice - everything sour))).More precisely - acetic acid fermentation went very actively and at the exit - sour))). I will survive. I will put it again.
Elena Tim
I will try, Natus, not to give up, although, oddly enough, there is no desire to badyazh new wine yet. We can wait about a week and put something new.
Matilda_81
Elena Tim, Lenok don't be upset !!!! I have liquid yeast 4 times the discharge was, covered with mold !!!!! My husband already began to swear, they say it does not work and it is not necessary, it's time to stop, but the fifth attempt came out, and it wandered so super-fast, hissed bubbled. Maybe the first thing was not to start with oranges, but with grapes? grapes will certainly begin to ferment.
EVERYTHING WILL HAPPEN !!!!
Elena Tim
Yeah, Gul, I'll try. I was sitting just thinking about making apples out of apples ... I don't have grapes ...
Gulechka, thank you for your support! It turns out that I'm not the only one.

And I poured out this orange bottle, and it did not ferment. I don't know what kind of oranges they are ...
vernisag

And I poured this orange bottle
Pity
Kokoschka
Elena Tim, I wanted to offer you to pour it out before, what kind of oranges is unknown ...
The apples will ferment for sure.
I made orange out of the usual colors, I don’t know until 4th day ...
Elena Tim

Pity
Well, what can you do now ...
Quote: Kokoschka
I made orange out of normal colors, I don’t know until 4th day ...
Well, how, Lil, wandered?
Kokoschka
Flax fermented as much as you could hear, and a slight aroma of orange, but this morning the fermentation decreased and the liquid dropped by about 1 cm. Wait, if you get an orange from simple oranges! Apples are now already slightly aromatic, spring .....
Let's see what happens next, wait ........
Rada-dms
Girls, it doesn't cost anything to add a few grapes to any juice, it will not affect the taste, and the fermentation will go immediately more actively.
Mikhaska
Kokoschka
Mikhaska, cool! Oh Mikhaska ignored such a process ...
But the forum we have from Moscow and most to the outskirts including the near and far abroad ...... maybe who knows ???

Red oranges are a well-known type of oranges, very common. A lot of industrial juice "Red Orange" is on sale. It’s not about oranges, but the process has failed somewhere.
Mikhaska
Lilechkin! Even so, I was worried that again - to the wrong steppe ... So I deleted my speech ...

I don't know, but I really liked Ira !!! It would be great to find it!
SmiLena
Kara, hello, yesterday I also put orange wine and the question arose, on what day does fermentation begin? And then I'm afraid now, suddenly it won't ferment, but it doesn't ferment yet.
Kara
Elena, my wandering began actively on the third day, by the sixth I practically stopped wandering
SmiLena
Irina, thanks, calmed down, now I will wait more calmly
GruSha
I put my lipisin wine in the cold for a week. Only the smell does not smell very much to me, honestly
Florichka
And I put the current on today, 5 hours have passed, I squeezed it out manually. Such reviews are contradictory, Lena's got moldy, Gulsine's smell is not the same. I will wait for my own.
Kokoschka
I will pour over a little later and write about the smell of my wine! And in the refrigerator!
GruSha
Irina, I'm just very sensitive to smells, maybe this is how it should be ?!
Lily, really looking forward to it !!!!
Elena Tim

really looking forward to !!!!
I will also wait now.
Otherwise, I won't make it to the oranges ...
Kokoschka
Girls I poured wine into bottles yesterday.
Draft one tablespoon, yield 1.5 liters.
The smell is not strong mild mash.
Orange wine
Orange wine
GruSha
Lily, it means it still smells like braga
We are waiting for another week, let it stand in the cold
Kokoschka
Once upon a time they made wine the smell of fermentation will still be, I think. !!!! It's interesting to try it in a week!
I didn't add sugar!
GruSha
I also decided to leave without sugar
vernisag
But I think I can add a little sugar, this sour thing turned out
Kokoschka
I do not even know....! I have two bottles, you can add to one and not to the second ...
Kara
The taste of the finished product is highly dependent on the oranges themselves. From the first batch there was no mash smell at all, it smelled like wine. And without sugar it was a little tart, but not sour. And now here is the second batch of the 7th day today, it smells a little bit, but I can't say that the smell is unpleasant. Rather the opposite
Kokoschka
Girls, I tried and added a little sugar, I liked the taste more!
SmiLena
KaraHello, I’m back to you, I don’t know what to do, my orange wine doesn’t ferment, although it smells like mash, and there’s no mold either, there are 16 hours left before the end of the program. Do you think it is worth putting it further in the refrigerator or is it better to pour it out and try to make a new one
