Fruit cottage cheese pie

Ingredients

on a 40x30 baking sheet or a Ø 28 cm dish
dough:
Flour 300 g
Baking powder 2 tea. spoons
Sugar 75 g
Vanilla sugar 1 sachet
Salt pinch
Cottage cheese (fat content does not matter) 150 g
Milk 100 ml
Vegetable oil 100 ml
Lemon zest optional
filling:
any fruit
optional raisins or nuts
coating:
Egg whites 3
Sugar 50 g
Vanilla sugar 1 sachet
OR
Apricot jam 3 table. spoons
Water, cognac or rum 1 table. the spoon

Cooking method

  • dough:
  • Mix flour with baking powder and knead the dough. Roll out most of the dough on baking paper, from the rest of the dough make sides 2.5 - 3 cm high. Sprinkle the dough with 2 tablespoons of semolina.
  • Peel the apples (approx. 1 kg), cut them lengthwise into 4 pieces, core them and cut into slices approx. 3 mm thick. Place on the dough with "tiles", sprinkling each layer with raisins and cinnamon.
  • Fruit cottage cheese pie
  • Bake in a preheated oven at 180 ° (convection 160 °).
  • Heat the jam, add water or rum, stir and grease the finished cake.
  • If, like me, proteins are lying around in your refrigerator, then ...
  • Beat the whites into a strong foam, gradually add sugar and vanilla sugar (you can drop a drop of lemon flavor), beat until the sugar dissolves. Cover the finished cake with proteins and return to the oven for a few minutes to brown the whites.

Note

I was given a pastry comb in a set with dough scrapers (all for 1 ruble of European money), so they walked around in a circle (with large teeth).

Tatjanka_1
Stelochka and how long does it take to bake the pie at 180 ° with convection?
Stern
Tanyusha, the time did not work. When the dough is browned, it's done.
