Cooking method

  • Zuricher Geschnetzeltes is a regional dish of the German part of Switzerland. It consists of thin strips of veal with mushrooms in a creamy sauce. It is usually served with Rosti potato pancakes. I tried to prepare this dish and I must say that it is very tasty.

  • I have 500 g of meat. We cut it first into plates, then into strips about 1 cm in size.
  • Add salt and pepper to taste.
  • Chop the onion and mushrooms too. I took champignons and boiled porcini mushrooms.

  • Heat oil in a frying pan and fry the meat strips for about 2 minutes on each side.
  • The main thing is not to overcook, otherwise the meat will be tough and juicy.

  • Fry for 2-3 minutes and add flour. If you take heavy cream, then you need to take less flour, since the sauce will thicken from the cream anyway.

  • Then pour in the cream and stir.
  • Some recipes suggest adding 1 tsp to the sauce. mustard, but I didn’t add.
  • Boil a little and add broth. Add the broth gradually, adjusting the thickness of the sauce.
  • It turns out to be not liquid. Add lemon juice at the end.

  • Now you need to put the meat in the hot sauce and mix.
  • Do not boil the meat. To cover with a lid.
