Koruonblyants Shargach (Stuffed Veal)

Ingredients

Veal tenderloin 300 g
Boiled pork (or ham) 200 g
Cheese (Dutch, Emmental, etc.) 80 g
Egg 1 PC.
Milk or cream 2-3 st. l.
Flour psh. 1-2 tbsp. l.
Breadcrumbs 2 tbsp. l.
Rust oil for deep fat
Salt pepper taste

Cooking method

  • Cut the veal into four slices, beat off, season with salt and pepper. On each chop, put two slices of pork, between which put a piece of cheese, cover with a second layer of veal, if necessary, fasten the edges with toothpicks, roll in flour, dip in an egg beaten with milk on both sides, roll in breadcrumbs and deep-fry until golden crusts.

The source of this recipe is the book "Culinary Wisdom. The Cuisine of the Nations of the World", published in Kiev in 1974. Since then, it has been replicated as a German cuisine dish on hundreds of culinary sites. I usually try, having found a German recipe in Russian-language sources, to find its roots in German resources, but in this case, having sifted through a lot of information, I did not find anything with a similar sound. Then I turned on the "spatial imagination" and, catching the analogy, found confirmation of my hypothesis in some other culinary specialists! And I dare to suggest that here we are talking about the warped sound of the well-known king of schnitzels - Cordon bleu. But Cordon bleu is also a Swiss dish, and according to one version it was created by chefs from a wealthy family from Basel, where 75% of the population speaks German. So the Kiev cookbook did not go far from the truth! But what is "shargach"?
