Apple Parfait (Apfelparfait)

Ingredients

applesauce 150 ml
Apple juice 100 ml
egg yolks 3 pcs
cream 35% 200 ml
sugar 70 g
liqueur Calvados 1 table. l.
vanilla

Cooking method

  • For the applesauce, bake the apples in the oven and rub through a sieve.
  • Beat egg yolks with sugar and vanilla.
  • Heat apple juice and puree to a boil. Combine with egg yolks and sugar. Mix well. Put the mixture in a water bath and heat until thickened, stirring constantly. Add liquor. Cool down.
  • Whip the cream and combine with the egg and apple custard.
  • Put in molds and put in the freezer for 3-4 hours.
  • Serve with caramel and baked apple slices and sweet pie.
