Ingredients

Cow's milk 600 ml
Fat cream 300 ml
Coconut flakes or coconut cream 150 g
Almond essence 5 ml
Yolks 4 things.
Granulated sugar 115 g
Corn starch 15 ml
FOR SAUCE:
Mango (ripe large fruit) 1 PC.
Powdered sugar 30 ml
Freshly squeezed lemon juice 15 ml
Freshly squeezed orange juice 60 ml
Tangerine peel for sprinkling

Cooking method

  • Making ice cream
  • - Beat the egg yolks, sugar, cornstarch, almond essence with a little milk until the mixture is smooth.
  • - Mix coconut cream with cow's milk until smooth, warm to a boil in a thick-walled saucepan, stirring constantly.
  • (If you use grated coconut flakes, put it in a blender and grind it completely with 300 ml of milk. Get coconut milk, which we mix with the remaining 300 ml of cow's milk. We also warm this mixture almost to a boil. Insist for about 5 minutes. If you want, so that the coconut flakes are not felt in the ice cream, then we filter the mixture through a fine strainer.
  • To avoid brown blotches that may form due to the brown film located on the bottom of the coconut pulp, it must be scraped off with a sharp knife before chopping and boiling the coconut milk.)
  • - Pour the warmed milk in a thin stream over the yolk mixture, stirring constantly. Place the mixture in a saucepan and simmer, stirring occasionally, until thickened. You will get a delicate cream. Pour the cream into a bowl, cover with plastic wrap and let cool.
  • - Whisk the cream until soft peaks and gently stir into the cream.
  • - Freeze in an ice cream maker, place in a container and store in the freezer.
  • Making mango sauce
  • - For making the sauce Put the mango pulp into a mixer bowl. Add sugar, lemon and orange juice. Whisk until smooth. Transfer to a closed container and refrigerate until serving.
  • Innings
  • - Wash and dry the coconut. Make holes in two eyes with a hard, sharp object. Drain coconut juice, if available.
  • - Saw or split the coconut in two.
  • - Pour the mango sauce on the bottom of the coconut halves, put a large scoop of ice cream, garnish with tangerine zest. Submit immediately!

Note

Instead of almond essence, you can use Amaretto liqueur. I used ready-made cream.
If you can't buy a mango, you can try making a canned mango sauce. Just take and grind the mango slices with a little orange liqueur or zest.
The tangerine peel went very well here.
Ice cream is not very sweet, taste the mixture, add sugar syrup if necessary.
