Lemon waffles with sour cream (Schmand-Zitronenwaffeln)

Ingredients

Sour cream 200 g
Egg yolk 2 pcs
Milk 4 tbsp. l.
Flour 125 g
Sugar 50 g
Vanilla sugar 1 pack
Baking powder 1 tsp
Salt 1 pinch
Lemon zest 0.5 lemon
Lemon juice 2 tbsp. l.

Cooking method

  • - Toss sour cream with yolks, sugar, vanilla sugar and salt. Wash the lemon (orange), grate the zest, squeeze the juice and add to the sour cream mixture.
  • - Mix flour with baking powder and stir in milk and sour cream mixture.
  • Adjust the thickness of the dough to suit your waffle iron by adding flour or milk.
  • I always bake a test wafer, then bring the mixture to the desired consistency.
  • - Preheat the waffle iron and brush with a non-stick mixture.
  • Bake the waffles according to the recommendations for your waffle iron.
  • Sprinkle with powdered sugar.
  • Fast waffle cream.
  • - When you need to quickly prepare a cream for serving waffles, I simply mix in arbitrary proportions delicate cottage cheese (mascarpone), sugar, sour cream, zest and lemon or orange juice. Then I add candied fruits.
  • Or I mix cottage cheese with whipped cream, and then the above additives.
  • Lemon waffles with sour cream (Schmand-Zitronenwaffeln)

Note

Nice recipe, waffles are almost cookie-like. Made with orange juice and orange zest.

Olk, does it look like a cookie? Straight-straight?
And then, to be honest, I stopped getting the waffle iron. Tired of translating products! I hate it when the waffles cool down and turn into stupid pancakes. The point is finally to mess with them ?!
I recently watched the program "World Market", where the guy runs around the world in all sorts of markets, shops, cafes and so on. So, being in Brussels, he taxied into one cafe, very famous for its waffles. It grit so much that their "Brussels waffles" are nothing but soft cookies, somewhat similar to shortbread - very, very tasty. I, too, always thought that thick waffles should be just like that. But no matter how many recipes I try, the result is the same: chilled - pancakes!
Hadyst cocoaaa!

Elena Tim, Laziness, for ALMOST cookies! When I made this recipe, I thought that I needed to add a little butter, and you get a cookie.
I myself have been looking for a recipe for waffles for a long time, like cookies, until I found the ideal. The problem is that the wafer dough is always thinner than the cookie dough.
I will continue to search and chemise myself, whistle as I find it !!!
I want friable !!!

Well, boom, seek ... or invent ...

Zimtwaffeln (Cinnamon Waffle) I found the recipe here, I bake on the grill of the 4.4 stock, I reduce the amount of cinnamon, so they look like cookies, over time they only get better, even when I bake them with a cookie syringe, and not with a spoon, they turn out smooth, round, I bake all the recipes that come across, but once, and these have taken root, I want to try adding c / z flour. I will definitely try this recipe, suddenly I have a second
Rada-dms
selenа, I saw that recipe but didn't try it. I'll try! There is a lot of oil, so they will be crumbly. Probably, in a waffle iron for thin waffles, they really turn out to be round. But I want it to be easy to spread the dough over my "Flowers" shape. That is, a very thick dough will not work.
In general, it seems to me that for each shape or waffle iron you need to select your own recipe.
For a long time I myself "collected" a wonderful recipe for rolls and just round waffles, baked in an old Soviet rectangular waffle iron, it turned out great. Baked in "Flowers", it's not that! In "Flowers" the thickness is average, and the composition is not very suitable.

I'm sorry, but please explain what non-stick mixture means!

Girls, but I was lucky !!! Even before I bought the waffle iron, I tasted the biscuits (one hundred percent biscuits, crumbly) of an acquaintance, and she kindly shared the recipe with me. Therefore, when I purchased this device, I did not have to experience the torment of searching. Now this is the only recipe I use for my waffle iron. A lot of cookies are made from these ingredients, but they are no worse the next day. So the recipe:

1 pack of mala creamy or warm softened margarine (I took 200 grams of margarine for baking)
3 eggs
3 tablespoons sour cream
3 tablespoons vegetable oil
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups sugar
5 glasses of flour.

Stir, keep in the cold for at least 2 hours, bake in a preheated waffle iron. The dough turns out to be very steep, you need to lay it out with a tablespoon and not a very thick layer (during baking, the biscuits "swell" very much in thickness, a tablespoon with a big heap of dough goes to one tab.

P.S. Glass 250 ml.

I hope you enjoy this recipe too.

Look in the previous message, I laid out the recipe for just such waffles made from steep dough, and it's not so much waffles as cookies, crumbly, "plump" and not perishable - the next day they do not lose their freshness. I make in my waffle iron only according to this recipe, and I'm not looking for another !!!

Do not invent, taste the cookies according to the recipe of my friend from my message above, I think that your search will end there.
Rada-dms
tatyanochka, thanks, seems to be true! A very good recipe! I will definitely try!
Question! What type of waffle iron do you bake?

And yet, I wrote above that it is difficult to smoothly spread, distribute very dense dough in the form of "Flowers", and at the same time achieve the ideal shape of the cookies themselves. And for me, the appearance of the waffles is important, no less than the taste.
But I will definitely try the recipe you proposed in the form for flat, uneven wafers! Thank you!

Oh thank you, Tatyana! Judging by the composition, these are straight shortbread cookies!
Could you clarify the weight of butter or margarine? It's just that packs are different and the weight sometimes varies from 180 to 250 grams. And yet, what kind of glass, 200 or 250 ml?
Rada-dms
Elena Tim, you must try, but for a sandy one for about 800 g of flour, 200 g of butter is not enough.

I bake it in such a waffle iron in which the cookies from your post are baked (as in your photo). You can see my waffle iron here: 🔗(to admins: don't think of it as an advertisement, such waffle irons are no longer produced).
Yes, it is difficult to decompose such a thick dough at first, out of habit and from ignorance of how the dough will behave when baking. But then, when you adjust the amount of test per bookmark, taking into account all the mistakes of the first parties, things will go faster. I did this: I took a tablespoon with a good slide of dough, put it in the center of the waffle iron, and distributed it all over the waffle iron with a spoon and with the other hand, a little short of the edges, since the dough, when heated, about a minute after the waffle iron was closed, would "swell very much "and" creeps away "on the sides. Try it, as a last resort the cookies will come out a little ugly after the first tabs (if you put less than the norm, there will be "undercooking", if it is more than the norm, it will creep out a little beyond the edges of the cookie cutters themselves, but in this case it is easier - you will break off the excess) And from the third tab you will already have perfect cookies.

margarine 200 grams, glass 250 ml. And these are really shortbread cookies! My children only call him cookies. And by no means waffles !!!

Rada-dms, oh, I fell in love with the zest during the competition, and here it is! I have no doubt that you can gobble everything at once
Rada-dms
NataliARH, I have not yet read here that all citrus fruits are processed, then all tangerines and oranges and, in part, lemons I ate with a crust, and so since childhood, now I suffer, they say that harmful chemicals on the crusts!
NataliARH
Yes, I am also worried about these treatments, I wash it with soap and a hard brush when I need to remove the zest, and I eat all the fruits without the peel)))) I clean with a knife

Rada-dms, and I am very grateful to you for this particular recipe, it became the first trial in our new Dexica - and immediately in the top ten! I read the recipe: no oil, how good! And they taste exactly thick waffles - and not cookies, and not pancakes. True, we also liked them exclusively freshly prepared, I thought to heat the leftovers in the microwave, try, but then there was nothing to try ...

And again, "hello" Last time, thanks for the recipe was unreported, some kind of unconvincing thank you, that's why I'm correcting myself: Olga, dear, thanks for the recipe - we love him dearly
