2). The recipe had to be slightly altered, since the dough in the original composition was rather thick and it was immediately clear that the small reliefs of the form would fill in poorly.
Therefore, per serving of dough, we had to increase the amount of kefir by as much as 1 faceted glass.
And even then, the dough, nevertheless, turned out to be barely overflowing for the Horn.
3). The horn is really big. Therefore, I called my dad, an amazing cook and pastry chef by the grace of God, for help in assessing his suitability.
My family guru decided that the Horn will fit about 1 and 2/3 of the dough from the original recipe. Actually, that's what happened.
4) Therefore, on his advice, I started completely the second portion of the dough and poured it into the mold to the first. And baked the rest in Garland.
5) 1/2 the volume of the molds should be poured into the Garland. Because the dough in the baking process shuffled with terrible force and grew exactly by the size of the intra-mold space. And, out of caution, I filled in only 4 tins, (no Bavarian muffins).
Do not repeat such nonsense after me! Fill half of all the Garland molds!
6) She baked a cake in the Horn at a rate of 165 degrees for exactly 1 hour 35 minutes. She took it out. I checked for a splinter in the thickest place. Everything is wonderful!
7) As expected, after 10 minutes I shook it out onto the wire rack. I jumped out like out of mommy into the light!
Cool down until absolute cooling. Otherwise, the cut is still slightly crumpled, as in my photo, and gives the impression of a damp dough. In fact, this is far from the case. Cupcake, even in the thickest place is amazingly baked!
8. The garland was baked for 10 minutes at 165 degrees. Then the temperature was increased to 175 and baked for another 25 minutes. We jumped out with a bang!
I wrote everything I remembered.
