Traditional Alsatian Cake (Altelsässischer Guglhupf)
For Nordic Ware 1.5 liter molds

500g flour
1 cube of fresh yeast (42g)
125 ml milk
5 eggs
200 g butter
120 g sugar
100 gr light raisins
20 ml rum
Grated zest of one lemon
Salt, grated nutmeg
7 pieces of almonds

Mix raisins and rum and leave for a while.
Yeast dough: Sift the flour, make a hole in the middle, crush the yeast there, carefully add slightly warm milk and dissolve the yeast in it. Cover the bowl with a towel and leave for 20 minutes.
Beat 3 whole eggs and 2 yolks with butter, sugar, a pinch of salt, a pinch of nutmeg and lemon zest. Add this mixture to flour, yeast and milk and knead into a soft dough. Let it come up again until the volume has doubled. Shake off the "extra" rum from the raisins and add to the dough.
Prepare the mold (grease with oil). Distribute the tonsils symmetrically at the bottom. Pour the dough into the mold and let stand for another 15 minutes. Bake at 200 degrees for about 50 minutes (or less if ventilated.)

50g starch
50g chocolate chips
50g finely chopped pistachios

For decoration - 200 g of chocolate glaze and 40 g of finely chopped pistachios.

Preheat the oven (190 degrees)
Marzipan mass + half sugar, vanilla bean pulp, salt, 1 whole egg, 6 yolks: beat well until foam appears.
Proteins + second half of sugar: beat in a strong foam, gently mix with marzipan mass.
Add flour, starch, pistachios and chocolate.
Grease the form with butter, put the dough in it, bake for about 50 minutes
Decorate with chocolate icing and sprinkle with pistachios.

Add vanilla to the butter-marzipan mass and beat, gradually adding the yolks.
Add half of the whipped proteins there.
Mix flour and starch and add to the dough with the second half of the proteins.
Grease the mold and sprinkle with pan. breadcrumbs. Lay out the dough and bake for 40-50 minutes.
Glaze: mix the jam and water, let it simmer for about 5 minutes over low heat, dissolve the fondant there and add the schnapps. Spread this mixture on a still warm cake.

sugar - 65 gr.

For me, the syrup is sour, and my husband ate it all (someone has some acidity).


Preheat oven to 160 gr. Grease the form with butter and sprinkle with flour.
Sift flour, baking powder and salt together.
Beat butter, sugar and sour cream together, on medium - high speed, until smooth, about 3 minutes.
Beat, adding eggs and vanilla extract one at a time.
Mix juice and zest.
Mix everything with flour.
