My kind of Ossetian pie. As always, I divide the dough into 2 pies according to the half recipe. Today I baked in the oven (because it was hot ...). I made the dough only on kefir, it turned out delicious!

Freelance dinner I continue to get used to Ossetian pies in the Clone-Princess (the one sold in "Lenta").
For three pies - 600 ml of liquid. Of which: 200 ml of water (yeast starter with 0.75 tsp sugar and a couple of grams of dry yeast) 200 ml of whey from homemade cheese, 200 ml of slightly expired kefir. 0.5 tsp salt. Flour - how much will it go (overdid it, went 900 g, the dough became taut, but baked normally).
Fillings (top to bottom):
1. Cheese (Poshekhonsky) half and half with mashed potatoes (there was no time to cook, I used "Puree")
2. Minced pork and beef with onions (plus hops-suneli and tbsp. L. Soy sauce)
3. Cottage cheese (actually - the salty result of the first attempt to cook homemade cheese), purchased ricotta, green onions, dill.
Each cake was baked at maximum power for 18 minutes plus 5 minutes of rest before opening, after which the Clone-Princess cooled down for about half an hour before the next cake (otherwise, the bottom may burn).
Also in the frame: homemade Double Oatmeal Stout and home-grown Drakosha pepper.

I always make the dough for half the recipe, 100 grams of flour is always whole grain, or some other "healthy" one. I knead pizza in HP on the program.
Today inside - mashed potatoes (I cook potatoes in small cubes in a Taperver rice cooker, 7 minutes, at the bottom - 1 cm of water ..), two types of cheese - cream cheese from Lenta, 30% fat, suluguni, lots of greens. Oh, and it's all delicious with milk ..... And it's also very good with buckwheat soup without potatoes (I cook it like that for my mother, so we eat it ourselves).

It seems to me that somewhere in my distant ancestors, those Scythian-Sarmatian-Alano-Ossetians inherited abundantly from me ... It turns out that the legendary (respectfully remembered by Comrade Stalin) Ossetian beer to the smallest detail is similar to my dearly beloved English brown ale.
