Cooking method

  • An Armenian woman taught me how to cook this dish, the number of ingredients and the method of preparation is slightly different for me and for her, so I will write two ways of cooking at once.
  • Beef with bones (they call this meat entrecote, ours - edges with bones) is cut into portions. Bones in volume are about 1/4 of meat. About. Soak the meat in water for 1-2 hours to drain the blood. Then rinse it, put it in a saucepan, put the whole tomato, bell pepper, just washed, together with the middle, onion, carrot, lavrushka, black peppercorns, bitter pepper. Bitter pepper tastes, as anyone likes in terms of sharpness. Our hostess put one pepper, it turned out spicy, but good for our taste. For their taste, as they said, it did not work out very well) I put 1 homemade pepper from the windowsill, my guests said, just right. They also put potatoes, but then it will turn out a little. I cooked the potatoes separately, because we are used to having a lot of potatoes on the table, so that everyone has enough for a side dish.
  • I fill all this with water, above all the risks, there is only left to the edge of 2 centimeters. Put the program "Meat" for 1 hour, pressure 0.7. The pressure dropped by itself. When cooked, add salt and let stand for another 5 minutes.
  • This dish is cooked on the stove for 4-5-6 hours, depending on the quality of the meat. We put the pan on the stove, bring to a boil and then cook like a regular jellied meat until the meat is cooked.
  • Meat is served separately on the table, vegetables can be served, if anyone likes. And the broth is poured into mugs and also served on the table! The broth is especially good as a snack (we had chacha)). Of course, it is unusual that broth is served on the table for guests, but believe me, having tried this broth, no one will refuse it!
