Ingredients

For a mold with a diameter of 26 cm:
The foundation:
cold butter 180g
wheat flour 280g
yolk 1 PC
milk is cold 3 tbsp. l
Filling:
chicken fillet (breast) 600-650g
eggs 2 pcs
sour cream (22-25%) 350 g
wheat flour 1.5 tbsp. l
mustard ready 2-2.5 tsp
salt, black pepper taste
garlic (or parsley) 3-4 cloves (4-5 branches)

Cooking method

  • Dough:
  • Add butter, cut into small pieces, to the sifted flour and grind everything into crumbs (it is more convenient to do this with a food processor, a nozzle - knives).
  • Add the yolk and milk, quickly knead the smooth elastic dough. We wrap the dough in plastic wrap and put it in the refrigerator for 30-40 minutes.
  • We take out the chilled dough from the refrigerator, separate a third and set aside. Roll the remaining dough into a layer (mold diameter + sides) on baking paper. Grease the form with oil. We transfer the dough on paper and put it in a mold. I had a non-stick bakeware, so I rolled out the dough on a silicone mat, greased the baking pan and laid out the dough without baking paper. The height of the dough sides is 3-3.5 cm.
  • We prick the dough with a fork in several places. We put the form with the base of the cake in the oven, preheated to 180 (convection 160) degrees and bake for 10-12 minutes. We take the form out of the oven and let the base cool down.
  • While the base cools down preparing the filling:
  • Grind the chicken fillet with a blender until a homogeneous, pasty mass. Add eggs, sour cream, salt and pepper to taste. Add mustard, flour, a few cloves of garlic, after crushing them with the plane of a knife (if you like parsley, you can use it instead of garlic). Whisk again with a blender until smooth. Pour the filling into the mold (on the base).
  • Roll out the remaining dough into a thin layer, cut into strips of the same width and put them on the filling in the form of a lattice.
  • We bake the cake in an oven preheated to 180 (convection 160) degrees until the top is browned (about 50-60 minutes).
  • Remove the cake from the mold, let it cool slightly and serve. Bon Appetit!
