Bork. Delayed Start Whey Bread

Ingredients

Cold serum 250 g
Curd (soft cheese) 50 g
Vegetable oil 20 g
Wheat flour, premium 400 g
Salt 1h l.
Sugar 1h l.
Dry yeast (Saf-moment) 3 g

Cooking method

  • Load the products into the CP according to the instructions - first liquid, dry on top.
  • Turn on the kneading of any program for 1-2 minutes until all the flour is moistened and a "kolobok" is formed, then turn off the HP:
  • Bork. Delayed Start Whey Bread
  • Then turn on Program No. 1 Main program (3 hours), weight 900 g, medium crust, then turn on "delayed start". That is, if the current time is 24 hours, we need bread by 10 o'clock, then by the time of the main program (3 hours) we need to add another 7 hours. The display will show 10 o'clock.
  • Delicate airy crumb !!! Delicious!

I added a little water, so it was kneaded for a total of 10 minutes, until the water was absorbed into the bun. And I put a delay for 4 hours, for a total of 7 hours. Now the program has started, let's see It smells delicious, the dough rose well during this time, but it did not jump out either. Let's see what happens

I didn't bother with dry cottage cheese, but decided to make cottage cheese from my yogurt. Then I thought - what will I get from yogurt - whey and cottage cheese. Right? Then why should I do this, if then again the whey and cottage cheese are mixed? Since I did not know the exact yield of cottage cheese from yogurt (and I have it very thick), then I poured into the bucket not 300 ml of yogurt (250 + 50), but 290 - up to such a bun as you have in the photo. And that's it! The rest is all according to the recipe, don't even hesitate. The bread turned out to be exactly the same height as it usually turns out in my Panasonic from 400 gr. flour.
Well, the bread itself is wonderful! The crust is crispy as I like. The crumb is cool. when slicing, it did not crumble at all, even the birds have nothing to carry in the feeder. And how happy I am with the process! I mixed everything and got it ready! The beauty!
But with the photo I have something wrong today. I did about 20 frames, but all of them were kind of muddy. These are the best:
