This means that I did it strictly according to this recipe, only instead of pears - pumpkin. I had it light yellow and without a pumpkin flavor (I don't know the variety). Added for the color of a strong decoction of blackberries. I left a little on purpose to try. Well, very tasty. You will never guess that this is a pumpkin.
And, Ksyusha, a special thank you for this method of cooking. I used to make jam using the intermission method. But the berries / pieces of fruit were missing from the syrup. I just brought it to a boil, boiled it for a couple of minutes, then turned it off ... I repeated this several times. But this way is much better. Pieces of pear and pumpkin are transparent, strong, but soft at the same time. Now this is the only way I will make jam.

Maybe it's the coffee. Different varieties and different roasts have completely different smells and tastes. Once friends from Cyprus brought coffee - my mother was delighted, but I could not smell - I smelled of algae And my husband and I have different tastes for coffee - he loves strong roasting, so that he smells almost like smoke, and I - lighter, softer ...

Then this year I came across the fact that it smells (but what, it stinks) sugar! It's good that jam with spices is almost invisible. But in jam with nectarines - there is an unpleasant aftertaste. Maybe this added an unpleasant smell.

Well, a few words about Conference pears. I do not like them, by a sinful deed, for nothing. Compared to other pears, their aroma is barely perceptible. It seems to me that just this recipe for jam implies fragrant pears.

I would add a spoonful of cognac, vanilla extract, possibly lemon juice to such a jam and heat it up again.

And one more little trick. When I start experimenting with ingredients, seasonings, I mix the conceived spices in a bowl or in the palm of my hand, bring it to the main component (berries, fruits, cheese, meat, vegetables) and smell for compatibility.
