The temperature is kept normal, but only during the period while the contents are liquid.
Then, when a clot begins to form, the temperature begins to creep upward, above the set one, and Shteba honestly shows it to me.

For example. Today, at the set temperature of 37 degrees, the display was 45 degrees, and the thermometer showed 42 degrees.
Approximately 4.5 hours have passed since the start of the process.
