In general, there is three stages of boiling water.

At the SECOND stage boiling in water, the lower layers of already boiling water and the upper layers of still boiling water begin to actively mix. At this stage, all the water is permeated with small bubbles, which rush upward in a kind of "cloud". Many of these bubbles are very small in size, which is why the boiling water seems to turn white and cloudy, and from the side it very much resembles a bubbling spring. This "second state" (in China, this water is called "white key") Boiling water has unique physical and chemical properties and best for brewing tea (especially unfermented - white and green, and semi-fermented - oolong).

In the correct teapot or samovar, the water at this stage begins to "make noise" - shum of water becomes louder and more sonorous, and the tone of this noise becomes higher; the kettle, like an airplane, seems to begin to "take off". We add that this boiling stage is usually the loudest.

At the THIRD stage boiling, the entire mass of water evenly warms up to about 100 degrees and begins to boil intensively. Large bubbles appear on the water, the water bubbles, splashes, the kettle starts to "spit", and thick steam pours out of its spout.

Interestingly, at this stage the intensity of the noise is already decreasing, the kettle seems to "lose its voice"; only the bubbling of bubbles and the quiet hiss of steam are audible.
In general, actually it is better not to bring water to a boil for brewing tea, since such water is considered to be boiled over and impairs the taste of the tea. Even if you slept through the best stage of the "white key", then try to turn off the kettle brought to the third stage of the boil as soon as possible. It is best if after that you let it cool down a bit (2-4 minutes), and you can safely brew.In the third stage of boiling (or slightly cooled) water is perfectly acceptable for brewing fermented (black) tea, but not suitable for brewing white or green teas.
Let me remind you that boiling water is one of the ways to disinfect it. That is why, from childhood, the thought that "water must be boiled properly" was hammered into us. In principle, this is true, but if you want to drink really high-quality tea, then take care of good water in advance (see) and do not overboil it.
Usually, when brewing tea, a suitable water temperature is chosen "by eye" - according to external signs (noise of a kettle, boiling time, etc.; + experience, + intuition). But if you have the opportunity to stand near a kettle with a thermometer, then for different types of tea, experts recommend water of different temperatures:
A) Black (fully fermented) tea - 90-95C;
B) Green (unfermented) tea - 70-80C;
B) White (unfermented) tea - 65-75C;
D) Brewing oolong teas (semi-fermented teas) depends on the degree of fermentation of a particular variety.
Of course, a tea-man standing by a teapot with a thermometer (such thermometers, by the way, exist) will most of all resemble a homebrew chemist, and even such a formal approach will somewhat violate the aesthetics of the procedure. There is one way that after some training, you can find the optimal temperature for brewing different teas. It is as follows.
Bring the water to that same "white key" and start preparing for brewing - warm up the teapot, take out the tea leaves - and so on. All these procedures will take you some time. So, the water "laughed". Unplug it and cool. Now pour into a glass container or leave in the same enamel bowl. Place the water in the freezer. After 4-5 hours, the surface of the water and the walls are already caught by the first ice. Now remove the dishes from the freezer, drain the water and free it from the frozen first ice.
This ice is formed by the so-called "heavy water"- water formed not by hydrogen, but by its heavier isotopes, usually deuterium, occasionally with tritium. This water is very harmful to the body. Hydrogen bombs, which frightened us at the end of the last century, acted precisely on water - the water within the range of such a bomb became heavy, and slowly killed all living things.
So, get rid of heavy water ice and put the water back in the freezer. The water in the middle is the last to freeze, it has an increased content of salts, which are also not very useful for the body. This water is called easy... It is better to remove water from the freezer when the core is not frozen yet. If removed later, the whole core will be milky-cloudy. Frozen core is more difficult to remove.
Using a jet of hot or warm water, remove (wash) unfrozen water and ice of a milky cloudy color from the resulting ice. As a result, we get a beautiful "donut" of transparent color. I try not to freeze the water to the end and drain this light water.
