Fermented tea made from leaves of garden and wild plants (master class) (page 308)

MariV
Radushka,
Cherry will only do spring-summer, while the leaves are soft.

I will do all the teas this year; from the faded old - no, no!
Nadyushich
RadushkaI added the usual bitter rowan, but immediately I did not like the taste with it and didn’t pick it up anymore, but then I tried tea with it and caught a delicious hint of rowan. Apparently she had to insist. And the mono apple tree is also not enough for me, and with cherry (30 percent) it tastes amazing, but the color of the apple tree is beyond competition. I made the black chokeberry in mono, I don't catch its aroma, it's just delicious black tea, and the husband and daughter drag away from it, they say that the aroma is for the whole apartment, but my nose does not perceive it for some reason. Although the flavor is awesome during drying. Maybe she has also changed now, but I don't have her, I sent everything home, so I can't try. But I will collect.
It is already itching, too, when will the leaves appear ...

And I like the cold grape, in the heat it is good sour ..
Radushka
Nadyushich, OUR tea is very tasty in the heat and cold to drink. Any. The husband makes the usual soda. Says - citro!
And with bitter mountain ash you should try. I love mountain ash myself! And I even like her bitterness.
Wishlist grows!

By the way, cherries go well with mulled wine. Combined with mint and cinnamon, the drink becomes even more warming.
Radushkahow much interesting information! Cherries, I mean, our cherry leaf tea?
And I recently found a bag with leaves in the freezer (I collected it in the fall almost from under the snow) and wound the tea. For a long time, probably, lay in the freezer. Very little juice was released, semi-dusty tea turned out I liked the taste, but not straight aaah ... I hoped there would be more aroma. Although it may still be infused
We have here to the first leaves, oh, how far, oh So I already want spring

Albina, and your Ivan-tea grows? It alone can be made very different
Here, too, you can't walk around with garden trees (I found a single cherry at a distant friend in the country), but there are plenty of raspberries! And it can be made with or without berries.

I also like it, I have mixed grapes with sucker. Looks like a very good green. Swat recognized it as the best of teas. But I didn't even try Ivan-tea. I wonder what he is. We do not grow.
Elena Kadiewa
Yunna, Natasha, came the address in a personal, I'll send you to try.

OUR, of course! I don’t drink anything else now! And the husband too ... Even "unsuccessful experiments" have already been drunk by almost everyone.

Elena_Kamch, by the way ... I remembered! Do you have geraniums? It should be like ... Look, Zakhary is making tea!
And yet ... a bush of Kuril tea woke up in me. Don't you have one?
And raspberries are the only tea that everyone likes mono

This is Yes! We don't drink others either. I mean, do we put our tea into mulled wine? Interesting idea! True, I liked the cherry in the tea so much that it ended with us first
Quote: Radushka
Do you have geraniums?
Some people grow houses. We have snow until June, no geranium will survive. And the nights are cold all summer, from the ocean fog very often
Kuril tea has been seen somewhere in the wild. I found out last year in the fall, maybe I'll find it in this
Elena Kadiewa
How you make me happy, tea-lovers!
And Lyudochka too!
Radushka
Elena_Kamch, I planted a Kuril bush in the fall. Already awake. Little such leaves seemed! Although in the morning we still have a minus

Kind people!
Who can send wildweed with rhizome for growing? I live in the Volgograd region, I can't find fireweed yet. I don't know yet whether it is growing or not. Seeds were sent. It didn't work out to grow.
I can send thyme instead. Now it is blooming with us. Or for money.
Nilda
Thank you very much!
Everything is very detailed, understandable, and most importantly - inspires. All three master classes are just super!
Elena Kadiewa
Yuri75, of course you have to do it yourself! Get in-like us. It is delicious! and contagious!
Radushka, will pass. But she seems to read Temko, rarely, if possible.
Nilda, and you probably already have leaves soon?
Nilda
Elena, the leaves began to appear, but they were very cold for the last two weeks, everything slowed down. Only shepherdia is already on the leaves. I realized that to collect the leaves, it is better to wait for the fruiting period, so that the fruits ripen, so that I will only pick the shepherd by the winter, she gives berries very late. Cherry will be available early, it ripens early in our country and grows wild enough. Well, blackberries will be among the first. Zhdems
I was very inspired and will definitely try this year.
But with Ivan-tea we have bad luck, it does not grow, alas, but my husband and I love him very much. We even thought about going somewhere to the Rostov region for the preparations, but this is the place you need to know.
francevna
Nilda, I live in the Rostov region, but I have not met Ivan-tea.
Nilda
francevna, it is a pity that there is no Ivan-tea on your plain either.
I climbed on the Internet and found that Ivan tea is growing in the Krasnodar Territory and in Adygea, but in the mountains. We have low mountains around the village, but you can see very low for fireweed. Maybe hunters need to ask around, they still go further. But where the mountains are higher (Mostovskoy district and south of Maykop), there are places where willow tea is collected, it is even called narrow-leaved mountain fireweed. It blooms in late June - early July, sort of. So I will try to find local people who know the place.
francevna
Nilda, and in 1999-2000 we went to Maykop, my son served there. But I did not know about tea at that time. It seems to me that I even saw him blooming there, driving a car.
Nilda
This means that we will pave the road to Maykop and take the initiative in search

CONCLUSION: You need to know the nature of your native land
Yuri, tell me where it grows in the Volgograd region !? All the acquaintances saw, but it is weak to show everyone! I am a biologist by education, I climbed the areas near us and did not find it! Small-flowered fireweed along the banks of the Bear is found in small quantities. I haven’t met Ivan-tea yet.

I am glad that you have it growing. What a score! Don't you confuse it with fireweed?

In the summer, a girl from the KhP forum from Moscow sent me ivan-tea rhizomes, and from the seeds she grew one bush. All wintered, palm trees are already standing. This year I will make my own tea!

I was also told that fireweed grows beyond Maykop. They promised to indicate a specific place where they collect themselves.
Nilda
kubanochkaif it is convenient and appropriate, I will be very grateful for a tip. In turn, I will also share it when I find out something specific.

Hello tea fairies! Take one more person to your team. who likes both the process of making tea and its use. In July 2015, I accidentally came to your site. And it was love at first sight. Made a lot of tea. Everyone liked the tea. Everyone drank with great pleasure. And today I opened the tea season of this year. Made the first tea. Composition: flowers of cherry, apricot, cherry plum, dandelion; Leaves: pear, elderberry, rose hips, maple, clover. Everything was ground in a meat grinder, dried. It turned out to be a very tasty tea, even without dry fermentation. Thank you all for such a wonderful site.
Light
businkairika, Welcome!
Luna Nord
businkairika, Irina, we are glad!
Radushka
businkairika, and what, you already have everything blooming ???
businkairika
Dearie, we are all in bloom. The apricot finishes flowering, the cherry and cherry plums are blooming, the pear and apple trees are on the way. Today I picked pear, rosehip and maple leaves with tassels. leaves are delicate, beautiful. They are easily taken by a meat grinder
francevna
businkairika, Irina, with the opening of the tea season!
It’s even unexpected that you can already make tea.
Here Lyudochka will be delighted with such news.
Share your presets.

francevna, Alla, now I am strenuously harvesting flowers of fruit trees. I will ferment them with the leaves. When I just dry flowers to decorate tea, they are eaten by a moth. But in the tea, the moth did not start. So, so as not to spoil the flowers, I decided to ferment them. I was very pleased with the result today. Immediately after drying, I brewed tea. The taste is amazing, light astringency and hints of fruit. It's a pity she did little. All my homemakers really liked Natalia Koval's tea with berries. Thank you very much for this recipe. All teas are asked to do this this year. It's a pity we don't have fireweed.
francevna
businkairika, Irina, we also don't have fireweed, so we drink fruit tea, since we have something to cook from.
Elena_Kamch
businkairika, Irinahow delicious you describe! With flowers, teas, I think, are very beneficial!
With the opening of the tea season! We are still very far from this, at least to rejoice for others
Borisyonok
businkairika, Irina!
Can I have a couple of questions?
1) dandelion flowers do not give bitterness? Or do you somehow process them additionally?
and 2) do you grind all the flowers or just add the whole tea mass?
Elena Kadiewa
And another question - do the flowers lose their aroma during fermentation and subsequent drying? After all, we always dried flowers just at a low temperature, and then added them to tea.
Zachary
elena kadiewa, I dry almond, apricot, pear flowers all the time. They do not lose flavor, but only without fermentation, simply drying and then adding for more flavor to their leafy variants
businkairika
Borisyonok, I put a little dandelion flowers. And they gave a very nice little bitterness. I really liked. I will grind flowers this year. Since dried moths eat me. A lot of dried stuff was gone. And in fermentation, they gave a wonderful taste. I think dry fermentation will smell delicious. But this is my point of view. Everyone does as he pleases
Borisyonok
businkairika, Thank you!
I'll try to make tea with flowers in the same way, otherwise for two years I dried the flowers separately and they were also "devoured by aphids"!
I'll try with dandelions too, but suddenly I like it ...
Oh ... I forgot to ask - and dandelions were added with "brilliant green" or only the yellow part!
businkairika
Borisyonok, only the yellow part.

The collection of leaves began yesterday. First, the leaves of the hawthorn. When fermented and dried, they have a wonderful strong tea smell.
Dandelion Flowers, we call - nuns, ( 🔗)) I collect every year. After the brew the blooming beautifully.

I didn’t do it separately. added only to the collection with garden plants. I liked it, I could feel a little aroma, not much, but there was some note.
ekivoka_i

Good afternoon to all tea-makers and delicious teas! I stumbled upon you by accident last year, at the end of summer and rushed to rip off the leaves at all available dachas, since the rest had already been robbed by that time) Unfortunately, the pruning of raspberries and strawberries has already passed ((But I stocked up a pear, a cherry plus an apple tree ( immediately bought up), a little blackberry (they let her go to her once and didn’t allow to peel her head off), several varieties of grapes in one heap, I did find raspberries, plus an apple, a peach and a Far Eastern mountain ash. it still differs. While harvesting, I was baldela from odors during fermentation and drying, and then - hay with hay ... But I was not upset, I reread the topic and endured, sometimes I opened the jars and smelled. I was only pleased with the blackberry. It smelled like pure cut raspberries! I understood - the time has come! Now I taste together and separately. I really liked combining two blends, cherry-apple and raspberry-apple. Fragrant and sweet in smell and taste, and the color is bright, beautiful. And the second cm you are - mountain ash, blackberry and pear for color. Quite the opposite, slightly bitter, just a little bit and the smell of black chokeberry - mmmm ... The peach didn't look, it smells very thermonuclear. The grapes are a little sour, I'll try in the summer with ice, as they advised on the forum, I'm not very hot when hot. Right now I drank some tea and came to say thank you!
francevna
ekivoka_i, welcome to the tea maker family.
It is very good that they shared their preparations and their impressions of the taste and aroma of teas.
Where do you live if the peach grows, it means in the south
We have a "Tea Gazebo" Temka, come for a chat.
Elena Kadiewa
And I am glad newcomers to our topic, especially with such experience and analysis!ekivoka_i, We greet you!
The day before yesterday I received a present from the Big Earth, tea, of course, prepared according to the method of Zechariah - a special THANKS to him!
Ingredients: pear, apple 20 each, chokeberry, strawberry 10 each, + elk, blackthorn, plum, raspberry and apple and black chop. What can I say, I have not tried this tea yet! And the color is saturated, transparent, and even the aroma ... with each brewing a new note was revealed ... I fell in love with him!
We do not have most of the scent, so such teas are a wonder. Therefore, many thanks to both Lina and Guzele for giving the opportunity to try something new and so delicious!
Anatolyevna
elena kadiewa, Flax, tea has a completely different aroma!
The commander drinks and I like where the composition is more than 5 flavors, they are under our number, (5) I'm not very much. My favorites are apple, raspberry, strawberry. (2).
Mila1
Girls-beauties, tell me, does anyone spin our tea on Axion? Soon to open the season, but I'm wondering whether THIS meat grinder will cope or not?
Elena Kadiewa
I asked this question in meat grinders, no one answered! So you, Luda, will be the first! I also want to order it.
Mila1
Lenochka, and I was waiting there, waiting for an answer, I decided to ask again here. There are just plastic sleeves that fly, so I wonder if I’ll cover her with tea Zhaaaaalko

Helen, there is an action for her until the 18th. Will you have time?
ekivoka_i
francevna, elena kadiewa, Thank you! It is very pleasant to have tea in such a warm company) Moreover, at home I am alone with this hobby: my husband does not recognize "hay" in any form, including green tea and any herbs-additives in black.
Last year's tea gathering took place in the Saratov region. The peach, an infection, does not bear fruit there and freezes every year, but again it grows very fluffy, so the parents refuse to cut it down. I thought I'd add some leaves, but I don't like it yet.
Lesichka
Mila1, Ludmila, I bought Axion last year especially for tea. There is Boshik for meat, but Lina showed a broken sleeve, and I did not dare to twist fireweed on it. I have a model M-31 02 with a grater attachment and a reverse.Included were 3 spare plastic sleeves. The price of these bushings is several times cheaper than Boshev's. Over the past year, I broke 2 bushings, on currants and on yoshta. Then my husband started scrolling and did not break more than one ... I do not regret not much that I bought this meat grinder. All grates are suitable from a manual meat grinder and knives too. She is noisier than Bosch. Fireweed scrolls at once. Gardening is more difficult, you need to adapt, not to shove a lot, but a few leaves and without interruption, so that the load is even. This is how my husband taught me. And then he got involved, liked it. Well, what else can I say? The reverse is obligatory, it helped out many times. I have not tried the grater ...
Elena Kadiewa
Luda, I will order Axion here through the store - I will have it in reserve. I have a plastic gear in Polaris. broke, changed, works now. Where is the discount?
Well, that review has come, Lyosichka, thanks!
Lesichka
elena kadiewa, Elena, I will be glad if my review is useful! Yes, I forgot to say that only fireweed I rolled 134 kg. The total amount of tea was 26.7 kg. And more than one bushing break. It was only later that I broke two in the garden. Thank you very much to Lyudmila for such an exciting activity, it is not possible to stop like a tea addict, everything is not enough for me. The husband and son only giggle at me, but, it is true, they help. Lyudmila is a person with a wide soul! For the second year we have been drinking tea for her health, with gratitude from all our relatives
