Fermented tea made from leaves of garden and wild plants (master class) (page 209)

Marina, they can easily vote! They are looking for something, they get on the topic, and here at the top is the vote. Why not have a hand? After all, if you read it carefully, something becomes clear. And if you just look at the name of the topic ... But the word "fermented" is inserted to scare away those who do not know.
Now many voters will choose other options. Yes, and newcomers can catch up, who came out of the twilight not so long ago. I think that not all have come out yet. Luda decided to update - it means that it is necessary to update. So we threw a lot of words for her - let her put them into sentences and make up a question! She is the main fixer here !!!!
Loksa
lappl1, Lyudochka, thank you very much for your help in making the recipe. I felt like a student, but "I know how" - really ?!

Lyudochka, thank you very much for your help with the recipe. I felt like a student, but "I know how" - really ?!
Oksanchik, really, really! Good girl! Now you will just snap these recipes like seeds! Well done, let's take the record book! Five !
lappl1
Veronica, Marinochka, Zhenya, Lina, Galya and everything! Thank you for helping me write the text of the question. Veronica, and you have a medal for that! Thank you!
Only here is the phrase:
Quote: paramed1
Luda decided to update - it means that it is necessary to update.
Something puzzled me again. What? Think you don't have to change?
Galina Iv.
Of course, it is necessary to vote without trying all the teas and not comparing them properly, but I finally keep quiet about currants). That's just my opinion-5 is a lot! written 5 means and will be 5, thus they will not be able to highlight their main favorites, but will be sprayed
paramed1
Lyudochka, in the sense that you are in charge, this is your topic, which means that your word is the first, and ours are the second, assent. And nothing else! And it would be nice to update - many opinions changed during the tasting process. The tea is allowed to stand, the taste changes. But someone voted by trying the tea almost immediately after drying. So write to your superiors.
Galya, because at night I dreamed that everyone painfully chooses exactly 5 options, as said. Therefore, it is necessary to insert some word into the question, showing only the upper limit.
Mary Poppins
I still haven't voted just because I hadn't tried it at that time. I've tried everything I have for now.
And I also liked the mint according to Lyudmila's technology, but next time I'll put the mint to ferment for an hour or two, I can have a stronger aroma in the tea) True, when I dried the chopped bucket of mint, everyone at home went and looked askance at me (the dryer in corridor, not in the living area). The smell is not mint, some kind of cloying and incomprehensible.
No mint in the poll - on purpose? Or can people not otdetrate tea from mint, but simply added to the tea dried mint?
I wish I could taste southern tree tea for comparison. Maybe they are much better than my apple tree - moreover, red is tasty, and green is more tasteless)

What I mean is that I still cannot decide finally with five options. Three is probably easier. But not all my tea is correct and most likely in a year I will change my mind
paramed1
Mary Poppins, so no one forces you to mark 5 options! At least one, but the best for you. And mint is not on the list, probably because no one fermented it, but simply rolled it over and dried it. Secretly, I fermented a small amount. I didn't like the result, the mint aroma changed.
Mary Poppins
paramed1, I realized that they are not forced)) but I need five - I diligently remember five))

But I just liked the mint tea. It reminded me of her mint tea. I kept wondering why I can't make such tea from either fresh or dried mint leaves. I decided it was the mint variety.
But it turned out that you just need to make mint tea. Maybe low-fermented, but not dried leaves.

Enjoy now
paramed1
Mary Poppins, so I have the same idea about 5, that people will diligently recruit this amount of scent. Therefore, it is necessary to add the word "to", no more or maximum.
And I also like purely dried mint less than rolled through a meat grinder, and then dried. But there is a dependence on the variety.
Luda, didn't you make dill through a meat grinder, and then dried it? Or was she just going? If you did, what happened?
I’m sitting in the kitchen, I remembered to cook dinner, I’m making a casserole of corn grits, I’m teaching my husband ...
Linadoc
Tonya, happy birthday, dear.

Veronica, I fermented and reported. I have this tea in my favorites. Not vigorous at all, but mint-fruity, I add it to other teas.
paramed1
Then you have to put mint on the voting list. PEOPLE! INPUT, PLEASE! Lina, kill me I don't remember your report ... I missed it!
I, too, after fermentation did not have a mint taste and aroma, but as if with an admixture of another herb. I can't say that I like it very much, but I add to others. And different varieties behave differently.
Mary Poppins
I have one sort - semi-wild country house))
From time to time I think of a cultural plant, but what I buy in the market in greenery, I do not feel such a bright taste as in the wild

we have rain gushing, as if spring is on the nose, soon the leaves will ripen, but Veronica and I will be gone
Galina Iv.
Mary Poppins, you can find peppermint seeds on sale, here it smells!
Loksa
Lyudochka, recommends scrolling the mint in a meat grinder and drying immediately! I did it with fermentation, I waited and waited until I waited, the aroma was gone in two hours, I think.
Mary Poppins
Galina Iv., thanks, I'll pay attention when I stumble upon the seeds.

Loksa, quite quite? There was no aroma in the tea?
paramed1
Galya, it means, and the rain will come to us soon. What a pity - today the sun, streams, 7 degrees ... We need to breathe with you! Otherwise, soon ... But first, Lina will tell you how she prepared the mint so that it tastes good. Otherwise it tastes good to me without fermentation, but not very well with it. Like, fermented a little, about an hour.
Peppermint most often grows in everyone's gardens. Unless, of course, they bought hybrids, of which there are many now.
Elena Kadiewa
, the leaves will ripen soon, but Veronica and I will be gone
Checkmark, as you wrote wrong, explain. Do you have something growing together with the dacha?
Mint, or rather oregano, I also fermented a little, but I gave it to my daughter, I have to ask how she is to them.
Mary Poppins
Ladies, who has experience with a waffle maker for Belgian waffles? If it's not difficult, in the section Kitchen and household appliances - Waffle iron - Waffle makers, hazelnuts, leave your opinion on my question.
I need collective intelligence and experience. And there are few advisers in the topic now ..

If for a short time I bought a waffle iron and either the recipe is not the same, or the brand of the waffle iron is not the same, or it is generally better to buy a cooked pan.
It's just that I don't have much time - I need to either change or issue a refund.
Galina Iv.
elena kadiewaDuc Lina will soon be with Veronica .. well, death is shorter to us, we don't remember her report!
No, Veronica is raining, even though the sun could be seen before leaving
Elena Kadiewa
Aaaaaa, otherwise I'm something of that ... And Lina is kind, don't be afraid, even more so after so much drunk, but after your mermaid walks!

Where are you and Veronica going? Abroad hang around? are you going to travel?
paramed1
Lena, oregano smells different. But still ask, there are also a bunch of essential oils.I wonder how they rated it. And then I think, plant me a mint or wait.
Elena Kadiewa
No, Tonya, it smells like murder here, Lina intimidated Galya and Veronica. And I, too, "oh, I'm afraid, I'm afraid, I'm afraid"
Galina Iv.

after your mermaid walks!
you've never heard of business competitors being taken away Ha! yes, Lina, as a matter of fact, finally does not know, it was Veronica herself who asked for it

Galina Iv.
Veronica, you know everything: my last sour cream turned into bad sour cream, it stood for 6 hours, there were some indications of stratification.
stopped?
lappl1
Girls, I answer about mint. I don't know what varieties mine - there are three of them, but after fermentation I didn't like any mint. But simply twisted and dried in a dryer at 40 * is good! Why didn't I put her on the list? yes God knows her! Apparently, in the park. This time I will definitely bring it in.
Veronica, my God! I don’t let you sleep with my questions even at night. Poor thing! Switch quickly to something else. Oh, yes, drink a mint tea, you will stop immediately the painful choice to dream!
paramed1
GalyaWhat is a "bundle outline"? You mix it, it will be normal. Most importantly, how does it taste? I often have a small separation of whey in yogurt, as it was with sour cream. It could have stood a little, but it's not scary. The more the food is heated, the more acidic it will taste. But not spoiled! And sour cream, depending on the source, can be prepared from 5 to 8-9 hours, and the sourdough also depends on how much these bacteria will multiply there so that they have enough joint strength. Maybe you had a strong leaven.

Girls, you don't roll cylinders on Lina! She never intimidated us. It's just that Galya and I have a girl's memory, apparently. Oh, or maybe, on the contrary, sclerosis has already crept up unnoticed ...

Luda, I have already switched. And I drink tea several times a day. Now I added a pear to Ivan tea, otherwise it does not go alone. And together nothing. True, the color of pear tea is already very beautiful!
Galina Iv.
I have sour cream, Veronichka, the taste is not sour, sweet, but all in small grains
paramed1
Galya, what did you ferment with? The cream was definitely not vegetable? And mixed the cream thoroughly with the leaven?
Linadoc
Well, it was worth going online for a minute and that's it: Luda received a prize, Galia's sour cream exfoliated, and then sclerosis crept up to her imperceptibly and, while he was swinging and Veronica fell, and now everything was dumped on me, like me .... .. And I'm generally ... kind
Galya, sour cream should be put on a cardboard box so that it doesn't overheat.
Veronica, I wrote that I am harmful, disobedient. I know that you cannot ferment, Luda wrote, but I experimented and fermented for 2 hours one and 3 hours another. And their smell went awesome - mint-fruit. And the taste of mint tea is now not thermonuclear at all, but very pleasant. I have one peppermint and one lemon.
paramed1
Lina, so am I! It’s impossible - I’ll try it anyway, and I won’t tell anyone ... So I didn’t ferment the mint. I held it for an hour, maybe a little more. It seemed that the smell began to go away, and I began to dry it ... Is it lemon mint lemon balm or a hybrid of pepper with lemon scent? I still have a hybrid with a chocolate flavor, but it's still small. But I have it with citrus, but somehow I'm not happy with it. This year I bought lemon balm seeds, I have a place for a garden bed, I will take there all kinds of herbal perennial, let it sow itself there.
And Galya herself asked for it! Nobody was going to her ... well, that ... And me too. I myself am to blame.
Not exactly sclerosis! Lina, heal !!! Gale answered and forgot the most important thing to ask, in what she did this sour cream. I’m starting from my bell tower, from the multicooker, I’m there right in the jars and make it with lids. And I think that everyone is the same. Galya, if you made in Brand, then if the jars are ordinary glass, it should not overheat at 35 degrees. And if at a higher temperature, then I don't know, I haven't tried it.
paramed1
Luda, well, you've finished pancakes at Masleni week! Congratulations! Very, very happy! You are smart with us!
Linadoc
Veronica, lemon balm is different, I also have it, but I added it straight to the village and fermented the whole mixture (it is a strong antiseptic, it kills almost everything in the oral cavity). And lemon mint is called that, it is like sweet mint with a slightly citrus tinge. I raised her from seeds. And the pepper itself grew under the apple trees.

Lina, Veronica, thank you girls, for your congratulations! I will not hide - it was very pleasant to receive the award. Although I did not bake pancakes, of course. I just didn't want to repeat myself during the week, because the guests came almost every day. And since baked, at the same time fotala. Then I wrote the recipes! The only pancakes I haven't baked this week are bran. I used to do them almost every day - I corrected my body after the January feasts. I am most glad that many people liked my recipes. And many write that now these recipes will become family recipes. And this is the most important reward!

Lina, I remember (although sclerosis ...) that melissa is different. But many call her that, that's why she asked. And here someone tried to ferment one lemon balm, like. I have one that looks like your mint, but it has a decent shade of citrus. It was peppermint "Citrus", sort of. And peppermint "Chocolate". I bought it at OBI. In fact, it smells like chocolate. But it grows slowly ...
Linadoc
Veronica, lemon balm and mint are from the labiate family, and most of them prefer shaded conditions. Melissa has been growing under my maple for about 5 years. Peppermint under apple trees, and lemon mint under irga. You plant them in the shade so that the sun only falls on them in the morning.

Girls, thank you all for the sour cream instructions. It turned out super! At the same time, I made sour cream (10% cream) and katyk for the ferment of Helen-Kubanochka (with baked milk). In sour cream I put fresh thick Brest Lithuanian sour cream, and in katyk the same, but 3 weeks. I didn’t put it in a yoghurt maker, since I didn’t know yet how it heats, but in a foam box with an open side to the stove. All other things being equal, the sour cream turned out to be not very thick, and even in a warm state, cut the katyk with a knife. The most interesting thing is that the taste is almost indistinguishable - the sour cream is sweet, tasty in both jars.
What is it that you can make sour cream from baked milk?
In general, thanks again to everyone! I am very pleased. now I will only do it myself.
P.S. by the way, I finally tested my yogurt maker. There are two functions - yogurt and sauce. It's clear about yogurt, but what is sauce? Who knows?
So, in one jar I poured water t = 40 *, and in the other 5 jars - at room temperature. I didn’t put cardboard boxes, because why should I feel sorry for water. After 6 hours, all jars had t 37 *. So my yogurt maker is super! Now I will do everything in it.

This is how they grow. At the northeastern wall of the house. Ordinary mint, without overshoot, grows perfectly, already crawls out of tires. But the last is something weak for the second year. Probably, I will transplant it into my "forest", to the raspberries, and the irga is spreading nearby.
By the way, I had it a long time ago, just bought a dacha, mint, left over from the old owners. So this infection, although it grew in the middle of the resulting vegetable garden in the sun, did not take anything - neither deep plowing, nor digging, nor picking out rhizomes by hand. I took it out for a very long time ... But it was not peppery, in my opinion, long-leaved.
In principle, the usual is enough for me, I get several cuts per season. We should try to ferment a little longer.
paramed1
Luda, from baked milk something close to Varenets, probably, turns out? Sour cream is a fermented milk product with a fat content of at least 10 percent. This is her definition.
Elena Kadiewa
Uraaaa! Lyudochka, congratulations, I'm so glad! It's nice that our tea girls become winners! Hurrah!
lappl1
Yeah, Veronica, one of the girls has already written about Varenets. But my Varenets is very much like sour cream - both thick and sweet, and the taste is the same as sour cream.
Actually, I did katyk. For 4 days at the stove it has been in a jar for a little bit, for sourdough. But it does not turn sour in any way. I'm really worn out. so I want to make sourdough for Asian cakes, but the katyk doesn't want it yet - sweet, damn it ...

Helen, honey, thank you! And how pleased I am that you are pleased!
Now we need Tonya, Lina, Lena-kubanochka, Oksana to participate in the bread competition. With our support, they will definitely win!
Linadoc
Luda, Brest-Lithuanian sour cream is bad, there is not enough CFU, if you ferment it, then only about 8-9 hours.
paramed1
Lena, and note that Luda began to regularly upload recipes after we began to "powder" her with all sorts of things on tea topics, most often completely irrelevant ...
Linadoc
Yeah, here it is - the magic action of the pendel
Elena Kadiewa
Aha! We continue in the same spirit! And we praise, we praise, girls, she will touch us now, because then there will be no time!

Here I am about the same! And then there are some - no need, no need ... We must, Fedya, we must! While the leaves grow with flowers, we'll learn everything!

Good night, girls, I’ve done something.
