Usually the dough hangs in one hand, in theory, after all, it should be rolled, changed the thickness, rolled again. As a result, you have to be sophisticated.
2) Markato has more flexibility in setting the thickness of the dough - 9 positions. Empire has 6. Here are a few intermediate steps missing. For 6, the dough is thin, already glows. And 5 is already thick.

On the other hand, I’m not complaining, I took a set with 4 attachments + raviolnitsa on the subway for 4 thousand. Freebie today.
