Lyudochka, from me, too, accept a huge thank you for the seagulls. Made granular. Last year, my hands did not reach the fireweed, I only made it out of garden sauces.
Andreevna, Alexandra, to your health! Welcome to our tea company! How glad I am that everything is working out for you, but this part of the post:

She had a pregnant daughter at that moment. The poor girl suffered from migraines, and then the seagulls from IVANUSHKA came to the rescue. It was a salvation. Drink some tea and everything goes away. A wonderful little boy was born. So accept gratitude from her too.
just a balm on my soul. It is fortunate that the baby was born healthy, and his mother easily endured the pregnancy.
Alexandra, thank you so much for your kind words! stay with us! Let's make tea together!

I didn't freeze her at all. And the smell was only BEFORE drying. Not now. And tea of excellent taste (here I sit and drink)
Radushka, interesting ... And it is not clear ... But the main thing is that the tea in the end turned out to be delicious.
Radushka
lappl1, Lyudochka, it seems to me that I overexposed it during fermentation. It's already hot here. And my husband unraveled my wrapping. And he went on a business trip. I went back exactly to the drying time (scheduled). Well, I'll cut some new strawberries on Tuesday. There will be no husband, no one will interfere. There will be a second try.
Something we mixed up the topics.
lappl1
Radushka, it's okay to be confused. The smell of fish in tea can touch tea from any flavor. In general, try to do it without helpers, and then tell me what happened.
MariV
Andreevna, Sasha, hurray, join our company! I, too, "got hooked" on tea making, every day something is dried in the bathhouse, it is fermented in a yogurt maker, it is fried in a pizza maker, and it is dried in a dryer. In a pillowcase in the wind - sometimes - it dries up!

Luda it is necessary to erect a monument on the forum for asceticism!

By the way, tea, which was first dried by mistake, and then fried, until the most aromatic and delicious. Well, time will tell which is the most delicious.

Olya, after your accidental experience and description, I also made one tea. I have not yet understood, since all the teas have not yet been infused, but it smells delicious with caramel.

Oh, how is it? For me it is also relevant. Yesterday I even moved my mini oven to the gazebo so that it would not fry in the kitchen. And in the princess it will be much more convenient for me.

Yeah, that's for sure. Also for the patience with which she every time chews everything that has been written many times.
I'm going to read your posts about the wrong tea.

And in Princesk the temperature is 250 ... All nutrients are neutralized unambiguously. And everything volatile will evaporate, and the taste will be different, different from the classic one.

paramed1,
Veronica, you can adapt to her, turning it on and off. And the paper to the bottom. You can simply warm it up without anything, and then, after a few minutes, cool the tea for a couple of minutes. In general, I'll try a little. for the sake of experiment
Loksa
I was drying in Ferarka, turning it on and off. dried up.
Andreevna, Alexandra, and how did the girl drink tea? Voluntarily or systemically? Very curious.
Andreevna
Loksa,
Oksana, I will definitely ask her and let her know. But most likely it will be only on Saturday, they left for Moscow yesterday.

Alexandra, Pasibka sat down to wait
MariV
Andreevna, Sasha, I fry in the grass - the princess is more aggressive. There is a timer in the grasswalk. I turn it on for 4-5 minutes, no more, at first it heats up for about a minute, then I throw the raw material, stir it from time to time, and that's it.

Yesterday I did it according to the rules - first I fried it, then I dried it. I don’t know yet, it takes time to compare and evaluate everything. I like it when different teas ... with different tastes.
paramed1
Girls, I'm talking about pizza makers again. Easier in a regular frying pan, since switching the PP on and off and stirring tea in a frying pan on the stove are equivalent. But to whom it is more convenient, of course ... The main thing is not to overheat, otherwise we will drink brown water with a smell, but there is no benefit ...
Albina
It turns out I wrote in the wrong topic
lappl1
Albina, nothing, start making tea, figure it out. The main thing is to do ...
MariV
paramed1, Veronica, it's easier for me to be in the grass, from her less heat goes to the arm and chest. Everyone has their own reasons for using one or another home technique.
Albina
I would have time to do it, otherwise I typed, and there are only 5 days left before leaving. It’s also so cold here. I should have tried it after the vacation. But I have no way back. NEED TO DO.
lappl1
Albina, you will have time. Place the heater next to the leaves. Wither faster. Just don't direct air at them. I wither all of May when the house was damp.
And in 5 days you can still make at least three batches of tea.
Albina
We don’t have a heater at home, we don’t use it. I think today I’m going to turn it through a meat grinder and wrap it in blankets.

After twisting the fireweed, wrapped it in blankets. But then the youngest son rebelled that he didn't like the smell. I had to take it to the kitchen. Now I looked: his color had darkened. But the smell is the same. I'm afraid to miss the time when I need to dry. Of course, I would like to hold it for 36 hours of fermentation. The apartment seems to feel cold, but +21.
paramed1
MariV, Olga, about technology - of course, who is more comfortable! Everything is clear about the reasons. In PP, then it is better to put baking paper or a mat for drying, dry on it, the raw material will not have direct contact with a surface with a high temperature.

Albina, do not ferment meat grinder fireweed for 36 hours. 12 hours are enough for his eyes. The temperature is normal if the saucepans are wrapped. I feel like it's time for you to dry. Leaf can be fermented as much, but not granulated. It can sour and lose the smell.

Hello! I'm new! I've been reading you for over a week. The materiel has studied almost all of it (of course, it is sooooooo far from the pros, but I read the basics). Started to work.I want to communicate with you and ask questions if you don’t shower with slippers. I am from Moscow, now I live in the suburbs, in the village. I climbed my site. I am mastering the forest and neighboring ones. The beginning of the preparation of tea. So far, it seems to me, not everything is working out and I do not understand everything. Made fireweed (small-leaved and granular). Everything is according to the instructions, but for some reason, I do not have a tasty smell (the smell of grass) during fermentation, but when I dry it, there is an aroma. My father switched to my tea (the store doesn't drink at all now). It is brewed well, the color is beautiful, the aroma is there. But it’s only 4 days. I'm afraid he'll drink everything before dry fermentation takes place. I also made pear, cherry, now at the fermentation "rustic" (cherry, fireweed, apple, linden, mountain ash, currant). Concerning 1 question: The leaves were all dried (10-12 hours), then in the freezer (some lay for a day, some more), yesterday rolled the rolls, set to ferment (at 0 o'clock), now almost 10 hours have passed. There is no smell (that is, the smell of grass, like in previous times with fireweed). The color has not changed much (dark green, like wet leaves). WHAT TO DO? Cut or continue fermenting? 2 question: A neighbor has Chinese lemongrass. Allowed to vomit. How is tea made of it? Is it worth it? And mono to do or mixed with something? Question 3: can you twist several plants at once through a meat grinder (for example, apple and plum, apricot and currant) or do it mono, and then mix dry?
Sorry for the abundance of questions, but beginners have a ton of them. "I'm not a sorceress, I just learning". Thank you!

mono to do or mixed with something?
Albinochka, our tea guru Lyudmila, writes that she stopped making mono teas altogether and I agree with her (except fireweed), then I still have to mix. I roll all the leaves together, twisting them together, because if we make a mix, then it is necessary that in one granule there should be many different smells at once!
lappl1
Guzel62, welcome to our tea company. I am glad that you have joined us.

10 hours for garden plants is a lot. Already need to dry. Next time I recommend cutting the rolls before fermentation. It will be better this way.

guzelLemongrass is referenced in the recipe notes. Find it, please, and read it. I didn't do it myself.

Question 3: can you twist several plants at once through a meat grinder (for example, apple and plum, apricot and currant) or do it mono, and then mix dry?
Judging by your feedback, you have familiarized yourself with the Village Tea recipe. There all the leaves are twisted together. So tea turns out better than mixing different ones later.

Sorry for the abundance of questions, but beginners have a lot of them. "I'm not a sorceress, I'm just learning." Thank you!
guzel, a couple of days ago I added a post called Tea problems. What should be done to find the error?... Check it out, please, by clicking on the link. This post has already been written, but I repeat that it is advisable for beginners to familiarize themselves with the notes to the recipes and the active links posted there. Yesterday I added a post * Anyuta * to these links. She is also a beginner, but described her first tea making experience in great detail. It would be nice for you to familiarize yourself with it.
We will be happy to answer your questions, but, as I wrote in the post about Problems with tea, you gave us too little information to answer your first question. Judging by the second question, you have not read the list of plants from which our girls made tea. And the third question suggests that you either did not read the recipe for Rustic tea, or did not read it carefully.it would be nice if you did.
Guzel, do not be offended, please, but every day newcomers come to our topic and the questions are repeated. Therefore, I ask you carefully read the recipes and the list of all links to him. Many questions will be removed from you at once.

Girls, hurray! They brought me a whole pillowcase of fireweed leaves, I'm so happy! Now it's drying, though it's cool in the room, only 20, maybe it will be in time for my daughter to scroll and ferment, I dream

Lyudochka!Thank you so much for your prompt reply. But 3 question in no way related to "country" tea. He was just about the advisability of mixing in the tea making process. I realized that better mix right away, but if you really like it, you can mono.
About "country" tea. I read the recipe very carefully. The only thing was that I did not have a pear (it doesn’t grow with me, but I couldn’t get to my neighbor in another village, I’ve already thawed everything else). I did everything right. About the fact that the rolls should be cut before fermentation is not written there (or I "blind" did not notice). Now I understand, I will cut BEFORE.
Anyutin read the post.
There can be no offense! After all, I came here to STUDY from you! Correct, criticize, scold, advise, PLEASE!
Thank you very much for the science, study, attention to us-clumsy, wasting your precious time, affection!
I went to cut and dry urgently. I will report.

But question 3 had nothing to do with "village" tea. He was just about the advisability of mixing in the tea making process. I realized that it's better to mix right away, but if you really like it, you can mono.
Guzel, in general, country tea is the name for tea made from a mixture of any leaves. It's just that this recipe was based on an old Russian recipe. But then we started mixing different plants, not just those indicated in the source recipe. And we noticed that any mix turns out to be tastier than mono teas. And if you mix ready-made mono-teas, it will also be delicious. But the mixes at the cooking stage are better. And one more important plus of creating mixes at the stage of making tea. In any mix, strong granules are obtained, which is very problematic with some plants when you make mono teas from them.
We don't take Ivan tea into account, although the mixes are gorgeous with him.

You can cut the rolls before fermentation. Then the mass will be denser and fermentation will be better.
And in Ivan-tea - no. I'll add it now.

Thank you very much. I cut the rolls. Where I cut 0.5 cm each, the rolls are dense, do not fall apart, where I decided to make smaller ones, there are almost no washers, just tea leaves. Put it to dry in e-mail. oven for 100 gr., the smell went like nothing (ivanushka with something sweet at times). Let's see what will happen next. Unsubscribe.

Guzel, and I just came from the pond, but while rinsing my clothes, I was thinking about your tea. I answered you about garden sauces and firmly believed that they were discussed. Then on the pond I remembered that you are writing about the Ivan-tea topic. And for leafy willow tea, 10 hours of fermentation is not at all a lot. More is possible. Then I remembered that you froze the leaves and got completely confused (the fireweed is not freezing). I came home and read it all over again. Well, at least you sent a message. Otherwise, I really wanted to warn you that next time ferment willow tea a little longer.
In general, it is harmful to do several things at once - answer in three topics, wash, go to rinse in a distant pond, cook dinner, well, and do something else in passing. But I really want to answer right away so that those who asked the question get an answer faster.
It's good that everything cleared up.

Thanks for the advice Ivan-tea turned out wonderful, fermented for 24 hours, I want to get a stronger infusion. Here's another bad luck, it's raining every day, can it be collected damp, or is it better to wait for dry weather, I read that it is better to wait a couple of days, how much the tea deteriorates after rain, because all the beneficial bacteria participating in fermentation will wash off.
Vinokurova
MariV, Olya, but you can ferment in brandik, what do you think ?. in the same place the temperature can be set from 25 degrees ,,,
Omela
vestitoleg1, I collected after the rain, although this is not correct. You just have to wither the leaves longer and dry them carefully so that they don't get moldy afterwards.
