Yeah, you won't have time to rejoice at the attentive and meticulous beginners, as again everything is all over again, it feels like they don't read the recipe and links AT ALL, they looked at the beginning, and that's it! We are already waiting for a delicious aroma and black tea!
We have been making tea for the second year, and even then we constantly look at the first page, and here ...
Luda, excuse me, please!

Lenusik, honey, what are you asking for forgiveness for? You haven't asked me a question about tea once in a year. She just scribbled reports, what a great tea you made.
Guzel62
Hello tea makers. I want to report and find out possible errors.
Did 1 option - fireweed with irga.
Fireweed dried for 19 hours (the layer was big, almost 3 kg collected). She was stirring all the time. He was lying not on one sheet, but in three places. Not dry, but wilted well, the smell is pleasant. But since the irga and the wild apple tree had not yet withered (they were later put down), it was necessary, as Lyudmila advised (she looked in the instructions), to wrap the fireweed in a cloth, where it dried and put it aside. I lay in this fabric for about 12 hours. In the morning today, I rolled the leaves (willow + irga). The granules are strong. Nothing falls apart. Spun in a meat grinder with a fine grid. BEFORE THE MEAT GRINDER: I noticed: the fireweed became warm, some leaves changed color, became brownish (as I understand, fermentation began), the smell is pleasant and. in my opinion, stronger than with just withering (without shelter in fabric). The mass is warm. The smell is very pleasant. There were a lot of raw materials, I had to transfer to a large container, I checked the layer (7 cm), and in the previous pan it turned out 12 cm. I covered it with a damp towel and put it on fermentation. Some questions arose:
1. Is the fact that the fireweed is warmed up and darkened BEFORE fermentation is very bad?
2. If you get a lot of raw materials, is it necessary to transfer to a large container? Can't make the layer more than 10 cm? Why?
3. Must the grill be large? It is fundamentally? I have it, I played other teas with it, but I like the smaller granules. The meat grinder is doing well so far.
Thank you. I'm waiting for edits and instructions.

Is the fact that the fireweed is heated and darkened BEFORE fermentation is very bad?
I don't know how bad it is, to be honest. I made Ivan-tea only once. From leaves of different quality. There were dry and brown and green. Tea turned out! Nice and tasty. Only granules of uneven color. Grayish to black.
paramed1
guzel, while Lyuda is not there ... Raw materials can be twisted through any grate, as the meat grinder allows. Raw materials can change color when twisted, Luda talked about this - contact of juice with oxygen, ordinary oxidation. This is normal. The layer during fermentation should be up to 10, well, a maximum of 12 cm. If more, then fermentation will go unevenly and the tea will not be completely ready for drying. If less than 5 cm, then the layer will simply dry out.
lappl1
Guzel62, did everything right, do not even hesitate ...
Quote: Guzel62
1. Is the fact that the fireweed is warmed up and darkened BEFORE fermentation is very bad?
It is very good. It was not the fireweed that turned dark, but the irga. And the warm ones due to the fact that the leaves are slightly twisted and it was more difficult to twist in a meat grinder. in general, due to the greater frictional force. Physics...
Quote: Guzel62
2. If you get a lot of raw materials, is it necessary to transfer to a large container? Can't make the layer more than 10 cm? Why?
guzel, it is better to make several containers. I usually make 2 - 3 saucepans ... Why? Veronica answered ...

Not necessary. Do on the one you like best.

Luda, when I twist on a shallow one, the fireweed begins to change color already in the bowl, where I twist, the granules are stronger and the juice is squeezed out better. It's okay, let it oxidize! And always warm, so it's good!

Oh, don't scold newbies. This case is addictive !!! I immediately watched a bunch of videos, re-read all sorts of articles ... I got on fire, I wanted to ... but my head is porridge. the first time it did not work (after fermentation, my leaves seem to ferment). Next time I'll be smarter and will act strictly according to the recipe)))
Guzel62
Oh girls! Thank you very much for your answers. Calmed down. Put There are several containers for fermentation: just fireweed, fireweed + irga, fireweed + apple-wild, just apple-wild. The smell is crazy. Although everything is wrapped in warm jackets, it smells even through them. I'll dry it, brew it, try it, unsubscribe.

Tatyana, we do not scold, but regret that recipes are not read to us you have to spend time repeating what is in the recipe... To avoid porridge, you need to carefully read the recipe for making tea. And not collect all the recipes from the network together. Chose a recipe - work ...

May I ask an immodest question?
How much tea should be prepared on average to last until the next. season? for 4 people (2vzr + 2 children), we drink a lot of tea. Dried and packed only 2406gr.

Good day everyone! Today I prepared granulated tea from fireweed with tangerine peels and apricots) Already ripe with us)) I scrolled it in a meat grinder three times, the granules are strong, black tea, honey + tangerine aroma when drying) Dried, brewed, tasted delicious, cleaned before winter. Something like this ;-))) I wonder if apricot will show itself in tea or not? Well, we'll live, we'll see!)

lappl1, Lyudochka, ioy Ivanushka, planted on June 27th, gave 4 shoots in the meadow. And it's getting colder now. So, the hope to save and breed it grows stronger every day.
lappl1
Radushka, dear, how glad I am for you! Congratulations! You are his chol and cherish ... But do not expect that it will grow quickly.Three years ago, one Ivanushka stalk appeared in one place in a meadow near my house. How glad I was, although there is a lot of Ivan tea around. So this year there are only 10 stems - I just counted yesterday. But now it will quickly begin to spread - 10 stems - not one.
Radushka
lappl1, Ludmila, they promised to send me more. And beekeepers gave recommendations on breeding.
lappl1

Sasha55, Sasha, I sympathize. I can suggest such a solution. Mow the stems of willow-herb at a height of 20 cm in the clearing. It will certainly grow. Maybe the caterpillars will calm down by then? And try making tea from garden plants - a worthy substitute for fireweed.
Thanks for the sympathy. I was no longer even upset because of the tea, but because of the grove itself. We have it just outside the city, through it we ride bicycles to the dacha, there are so many people resting at picnics. It will be a shame if the forest dies. He really stands now naked, as in winter ... And of course I'll make tea from the summer cottages.
Tata
lappl1, Lyudmila, if a lot of fireweed has been collected and there is no way to dry it all at once, how to save it?
lappl1
Tataunfortunately I don't know the answer to this question. I would wither on the floor and walk around the perimeter ... Withered can be stored in the refrigerator for a couple of days.
Tata
lappl1, and if in the refrigerator, then in a cloth or plastic bag.
lappl1
Tata, I wrote about the refrigerator about withered leaves. Try to wrap everything in the fabric very tightly - roll and put in the refrigerator. Only spread on the fabric as thinly as possible. I didn’t do that, but someone wrote what I did .. Like this:

Ivan tea (fermentation of fireweed leaves) - master class
Loksa
This question is asked more than once, I do not see a problem here, unless, of course, the volume of tea does not exceed the capacity of the refrigerator. I keep the greens in wet paper - then the greens do not lose the turgor of the leaf. I keep it quiet for a week, who is stopping me from putting paper, newspaper, finally, wet - there are leaves in the bag, and then, when there is time, take out the fresh leaves and put them to dry ?! Or put the leaves in dry paper bags, or wrap them in a dry newspaper ?! Then the leaf will soften in the refrigerator, as I understand it, it will be cold withering! is not an option? Even if not in the refrigerator, but on the street in the shade, or on the balcony, a sheet does not fade on wet paper and does not suffocate!
Guzel62
Girls! Forgive me for God's sake! I’m not in the subject, probably, but I don’t know where to go. Tell me how to write a message in a personal message? I'm trying to write, but they write to me to enter some code. I just can't send, but I really have to ask. Explain, please, to the "stupid aunt".
lappl1
Guzel62It seems that on our site it is problematic for newcomers to send messages. And my topics are still in blogs (for editing, I asked the administration to move them there), so messages in my tea topics are not taken into account by anyone. Soon I will return the topics to their place, then the messages will be taken into account. And the problems with the PM should disappear after a while.
Guzel62
Thank you,Ludmila, for quick answer. Otherwise I was exhausted while I wanted to send a message to Anyuta(Anyuta73). Maybe you know how to contact her (sorry).
lappl1
guzel, do you know Anyuta on the forum or in person? We are from the same village, or rather, she comes here only sometimes in summer and autumn. Should come after July 20 - the mother-in-law said. She has an email address, but she rarely checks mail. If necessary, I will go to her mother-in-law and take a phone number, otherwise I only have her old number.

Well, I took out the first batch of tea from the pillowcase.)) The jar smells very tasty, some caramels. I don't feel this "confectionery" smell in tea. Maybe I have something with taste buds ...
And I also took out last year's tea from cherry leaves from the cabinet, something was not impressed with it last year, I decided that I had done it wrong, but I did not throw it away, I was sniffing in jars. )) Here it smells like cherry. And Ivan tea with it has such a cherry flavor and smell. In general, I liked it very much. Here I will harvest berries from the cherry, and I will harvest the leaves. ))
I also made the second batch of fireweed, but then the meat grinder let me down, there is little power in it. The leaves wilted a little harder, and my meat grinder did not master them. It just clogs up right away - that's all. I did not immediately remove this pressed mass between the knives of the meat grinder, and when I cleaned it, such an aroma came. I was thinking what to do with two packets of leaves ... I tried to knead it with my hands, something didn't work for me ... Maybe I’m not strong enough, maybe the leaves have wilted too much. In general, I ground it with a blender. It turned out ... like small-leaf tea ... The smell is nice, but there was no such aroma as after a meat grinder. Then I squeezed it thoroughly with my hands before putting it in a saucepan for fermentation. Has dried. Hanging right now in a pillowcase. I have not tried brewing yet.
lappl1
mumra, Tatyana, congratulations on your first tea! I hope you will do more.

After the blender, you will not get the tea that can be obtained in another way, since the blender only grinds the leaves, but does not give juice. but no juice - no enzymes - fermentation is bad. I advise you to prepare tea in a different way - there are 3 of them described in the recipe.

Congratulations on your first tea! I hope you will do more.
Thank you.)) Of course I will. In general, I love everything "homemade", I don't really believe in store products, I want to feed my family with natural ingredients, especially since my own garden. When she began to make tea, the husband sighed: "Well, I got to tea."

Quote: lappl1
Since the blender only chops the leaves, it does not give juice.
When I crushed it, I squeezed this crumb strongly, so that it became so oily, it gave juice. So there was juice there, but not as much as after the meat grinder.
In general, after this incident my nerves burst, I went and took out a new meat grinder on credit. ))) When she turned the meat for minced meat badly, I put up with it, and this was the last straw. ))) True, I have not tried to twist the leaves through a new one, I hope everything will be in order, I took the most powerful one in the store. I’m waiting now for my husband to take it out and take him to the fireweed plantations.

mumra, Tatyanamaybe before it's too late to change to another model? If the meat does not twist well, then the leaves will not become even more. Mine is already turning the leaves with difficulty (the middle of summer - they have become coarse), and the meat grinds without even noticing.

lappl1, Lyudmila. Thank you for your feedback. Unfortunately, I am not familiar with Anya.I just wanted to ask her for the address of the printing house or company where she ordered the bags and labels. I liked it very much. I looked through a bunch of options, these are the best and most informative. In addition, I found out that the usual order of 1000 pcs. each item. But I don’t need that much, and the composition of the tea is different all the time. Can she share the address and how to negotiate a small amount. If, you can phone, or ready to give your own (maybe sms will reset), or write to the email. address, or through you. As she pleases, I agree to any option.
Forgive that you have to communicate "ON THE AIR", but what to do if there is still a snag with personal mail. Thanks in advance and again sorry to bother you.

guzel, Anyuta did not buy or order tea bags and stickers. She does all this with her own hands. In the topic of gardening in the Notes there are links to its packaging and MK for the production of cardboard for packaging (with beautiful napkins). She makes stickers on the computer herself and prints them on a color printer. She never buys anything if she can do it herself. And she can do so much that you are amazed at her talents. And the typographic labels and bags were shown to us by Galina Iv. But she ordered in St. Petersburg.

I report on teas.
Prepared:
1. fireweed + irga. Granulated. The granules are even, spinning well. Dried very quickly) dried per 100 gr. only 50 minutes, dried out very well, rustled. I put it in a bag, dried for 1.5 days. The smell is fireweed, delicious. You can't hear Irgi (although I don't know how it should smell). I did not try to brew. So far, like it very much. Put it in storage. (250 grams of dry tea came out).
2. fireweed + apple (wild). Granulated. The granules are even (I spun all the teas on a fine grate), they spun easily. Fermented for 20 hours (I could not catch the smell in any way, then night fell. In the morning the smell was the same (wet fireweed) did not wait any longer, dried it). Dried quickly, almost like fireweed with irga, it was dried in a pillowcase for almost two days. There is an apple in the smell (it made me happy, since there is no irgi in the previous version). The color is reddish-brown. I liked the look and smell. I put it on "ripening" (220 grams of dry tea came out).
3. Apple (wild). Granulated. Enzyme lasted 19 hours (the reasons are the same). There are granules (after drying), but there is also "dust". Either overdried, or the granules fell apart. But this does not affect the taste. It already smells like an apple. I like it. I brewed it. The tea, oddly enough, turned out to be very strong, dark (although, as usual, I put 0.5 l-4 tsp on the kettle), gives off an apple. And when I added (to the next cup) dried apple crusts, generally a SONG! Liked.
4. Fireweed. Granulated ... I did it for the third time (it was both small-leaved and granular). Well, there is even nothing to tell. Fireweed-KING OF TEA! Everything worked out. Nice, tasty, aromatic, scent. In short, GREAT!
5. Made mint (as in Lyudmila's recipe). Mint dried for 7 hours. It wilted well, even at the edges it began to dry out a little, the lumps did not fall apart. Scrolled, set to dry. The smell is crazy. At the end of drying, just to headaches and nausea. For some reason, problems started with drying (for me). That is, the recipe says "dries quickly. At 80 gr. - 30 minutes." I dried it at 100 gr. two hours, then 1.5 hours for 70 grams, then put it on 50 grams and went to bed (it was already 3 am), the oven turned off automatically. Drying in a pillowcase for another day. I don’t know why it took so long (either the layers are thick, or the mint is very juicy (I have it huge, branched, tall, almost chest-deep, juicy), or did something wrong), but the result was pleasing. I don't like mint anywhere at all (it seems to me that it smells of tooth powder), when before they just brewed dried leaves in tea, it seemed to me that it smells like a broom sprinkled with exhausted tooth powder. This time I was very impressed by the smell. Yes strong, yes persistent (in the house after brewing it smells of mint for several hours), but tasty, viscous, an association with a warm, hospitable home, guests, friends, pleasant, sincere company. T.Thu, I have never liked mint, I am very glad that it is growing with me, now I will process it all (and not mow and throw it into compost, as before) and even drink mint tea. I brewed it and, surprisingly, I liked it. In another cup I added another pinch of apple, the tea turned out - TALE 1001 NIGHT. Dark, rich, viscous, tasty, Taste - apple, and smell - mint. Just a surprise. (350 grams of mint came out).
6.raspberries. Fired for 12 hours. Frozen (5 days), twisted in a meat grinder. The meat grinder choked, jammed, barely saved. After the second scroll, the granules became stronger and more uniform. No smell. put on fermentation.
Sorry for the long post, but I wanted to share my impressions. I can not stop, emotions are so "and a rod", there are a lot of impressions, words are not enough. MANY THANKS, Ludmila, FOR RECIPES AND GETTING TO THE GREAT TEA-MAKING BUSINESS! I can not stop. Even all the affairs, the garden, cooking are abandoned. I want to make and make teas with different tastes. But there are a lot of options!
Guzel62
lappl1Thank you very much for your answer about Anyuta. I understood everything, read all the links, looked through photos, videos. I also tried it about the bags, it turned out, but I wanted it faster and easier. There is no color printer, but I'll think about it. I adore talented and "handy" people (I count you among them). About mint ... Apparently, we have it different. I collect mine in the meadow. It is quite short, the leaves are small. and the neighbors are not growing any larger.

To your health, Guzel! Yes, Anyuta is so clever that you are amazed! It is easier to say that she does not know how, than what she can. And she knits, and sews, and makes jewelry, and weaves such masterpieces from newspapers that furniture stores will envy. This I have just listed a part. And what a wonderful person she is! I am very lucky that in summer and autumn I can occasionally communicate with her.
Guzel62
lappl1, Glad that you liked my report. I will continue to try to write about the results. Chayev has already prepared (calculated for the sake of interest) 1780 grams (beginning on July 2). If I do not slow down (the fuse will not pass and the interest will not fade. I think that this will not happen), then it should be well prepared for the winter. Friends and relatives are already in line. Father so generally switched to my tea, the store does not drink at all (already wrote). It doesn't even "ripen". He told everyone what a delicious and healthy tea. Everyone wanted to. I also tell everyone about teas, about the history of where the Kapor tea came from, how the English drank only it, how (in short) I make it, etc., etc. They already tell me that I am like a zombie. I also open the jars, sniff. I enjoy it. Cherry (cut from rolls) smells especially delicious. But pear (granular) is somehow rather weak. But let him stand, we'll see. But it brews well (dark, strong). "Village" (in various combinations) are also waiting for their turn.
Oh, sorry, just now I noticed that I am writing in the wrong Temko. Here is about Ivan-tea. Confused!
You can come to me! I am simple and sociable. And here I am a student, maybe not very lucky, but trying, attentive and diligent. But only - a DISCIPLE!

I completely agree with you. All people are adults - read the recipes, analyze and then ask questions. I think so)))))

So I dry my first tea from Ivan tea. Spun in a meat grinder. My three-year-old daughter really did not like the smell when twisting, she just plugged her nose and quickly ran out of the kitchen.
Fermented for 12 hours (overnight). I stand there sniffing, a little upset, because it smells like brooms to me. Then my daughter comes in and says: "Mom, does it smell so delicious with your tea? It looks like strawberry tea that dad drank at his grandmother's yesterday. And not at all like yesterday after a concrete mixer.")))))) apparently my nose is not so tuned. When my husband came, he said that he smelled of some kind of berries, only he could not identify which ones. I smelled, smelled and did not smell anything.
Since it was collected and wound up 3 kg, two parties turned out. The second batch was fermented for a little over a day. It was then that and I felt the smell. If you stick your nose right into the tea, then it smells like brooms to me, but a funky aroma has spread throughout the house and these are no longer berries, but sweet jam!
Now I am drawn into tea business, I want to do and do. Thanks to everyone for inspiring!
While I am visiting my parents in the village I will be engaged in preparations, in the city it will be more difficult, although I will definitely visit my friends at their dachas.
I also wanted to ask. I dry it on a piece of paper without paper. It is fundamentally? And how much tea to hang in bags? It's rainy outside, I'm afraid to leave, hanging at home.
lappl1
IrisKa_B, Irina, thanks for such a detailed report. I wonder how you do with smells! You know, try making a 3-4 hour tea. I'm doing this now. Very aromatic! And although the 24-hour one turns out to be stronger, the aroma weakens. You can mix teas of different fermentation, then the aroma and taste will be very strong.
Quote: IrisKa_B
I dry it on a piece of paper without paper. It is fundamentally?
If the tea does not stick to the baking sheet, it can be dried without paper. But it's more convenient for me to dry with paper. I lift it for opposite corners, then for others. Tea is collected in the center. Then I level it with my hands (does not burn). But it almost does not crumble during drying compared to if it is mixed with a spatula. At the same time, it is easy to determine the degree of dryness by hand.
Quote: IrisKa_B
And how much tea to hang in bags? It's rainy outside, I'm afraid to leave, hanging at home.
I cannot answer this question exactly. If it's damp outside, then the house is damp. It will take longer to dry. It happens, and hangs in a bag for a week. If warm and dry, it dries up in a day. You need to look at the state. Well dried tea has almost no smell and makes a dry rustling sound. If the tea has a strong aroma, it has not dried out. Well-dried tea granules do not crush or crumble, but break. Underdried - either crushed or crumbled.
Tanyashka
Girls, here and I seem to have got seagulls !!! Only now I don't know "correct" or not quite))) Initially, my Ivan-tea was a little dry. When I started to knead, I realized that the juice was weak. Has connected her husband. Sprinkled with water. During fermentation, the smell changed - it seemed sugary sweet to me. When I was drying, I even opened the windows. There is nothing to compare
this is the first experience)) We will drink, which turned out)))) And I will try again. By trial and error !!!
