I wonder if anyone has tried drying raw eggs? For example, I want to dry the yolks of raw eggs, according to the marshmallow principle, pouring them onto a tray in a thin layer, but dry until brittle.
Has anyone tried it?

Thanks for the answer! You are probably right that it is easier to buy ready-made egg powder, but it would be interesting to try to cook it yourself.
In its raw form, I was not going to use the resulting product, I planned to grind it into powder and use it for baking.
The instructions for drying Isidri say that meat can be dried in it, including raw marinated or salted meat. So I thought that the yolks of eggs are not much worse)
