Ingredients

Turkey thigh 1 kg
Water 1 liter
Salt 1 tbsp
Sugar 1 tsp
Pepper mix 1 tsp
Bay leaf 2 pcs
Garlic 4 cloves
Harness for constriction
Roasting bag

Cooking method

  • 1. Prepare the turkey thigh (mine, separate the bone if any). We do not cut the thigh into pieces, it goes in a whole piece.
  • 2. Prepare the brine (water + salt + sugar + spices + bay leaf + chopped garlic cloves). The water is cold, no need to heat.

The dish is designed for

800 grams of ready-made meat.

Time for preparing:

12 in brine + 1 hour 20 minutes for cooking

Cooking program:

The MV Redmond program

Note

The meat in brine was put into a refrigerator under vacuum, this reduced the time of keeping in brine by 2 times.
I forgot to weigh how much meat turned out at the exit, but about 800 - 900 grams, since there was not much liquid in the bag.

Gala
Marina, everything is very tasty and clear. I took it to the bookmarks.
