Cooking method

  • 1. Knead the dough in a bread maker (I have program 9 - Dough).
  • 2. Divide into 4 parts of about 240 g each, roll into balls (when molding, out of habit, I used vegetable oil, dumb on the board and on my hands, did not dust with flour).

  • 3. Proof on greased baking paper under a film (lightly grease the rolls on top with oil so that the film does not stick).

This recipe is very helpful. Although it is quite energy intensive in terms of electricity.
The rolls are very fried, with a good crust and "shop" viscous crumb. It rises perfectly when squeezing a piece of bread.
Not at all the same bread in a bread maker, although the proportions are the same. For some reason there is looser and crumbles. I like the airfryer more, albeit more troublesome.
I took a photo directly in the deep fryer with a flash, so the color is so bright, in fact, it turns out the same as in the photo below (on the plates).

I always bake in a regular gas oven, without convection. The bread is baked just like that. The smell is on the whole entrance. And rye, and mixed, and wheat, and sourdough, and yeast. This is a matter of habit, I think.

The second loaf was baked at 190 ° C for 10 minutes and after the overturn, like the first. I put in a thermometer - 96 ° C. The incision will be tomorrow, still hot.
