We take sour cream (the fatter, the tastier, but ...). I did it with 10% and with 15%.
Then, to taste, add lemon juice, sugar or fructose, freshly ground pepper, Russian mustard, salt to it.
If you choose the right proportions, you get a mass quite similar to mayonnaise. I always do it by eye, so I won't tell you the proportions. Try it and you will succeed.
