Ingredients

portions of pork (loin or neck) 4 things.
Champignon 150 g
bulb onions 1 PC.
parsley 5-7 branches
sherry (or dry riesling) 100 ml
broth (meat or chicken) 150 ml
cream (20%) 100 ml
salt, freshly ground pepper taste
vegetable oil

Cooking method

  • Chops prepared in this way will not leave anyone indifferent. Classic chops paired with a rich creamy mushroom sauce - your loved ones will definitely ask for more).
  • Dry the cuts of meat with paper towels and beat lightly, covering with a double layer of plastic. Then rub the meat with salt and pepper, brush on both sides with vegetable oil and let stand for 10 minutes.
  • Meanwhile, peel and finely chop the onion. Cut the mushrooms into thin slices. Remove the stems from the parsley (they are not needed), finely chop the leaves.
  • Place a large, heavy-bottomed skillet over the fire and lightly brush with vegetable oil. When the pan is well heated, place the pieces of meat and sauté them over medium heat until golden brown on each side, about 4 minutes.
  • Turn the meat over, increase heat to high and cook until golden brown for about 1.5 minutes (on each side). Transfer the meat to a preheated plate and cover loosely with a sheet of foil.
  • Add a little vegetable oil and onions to the pan where the meat was fried, if necessary. Fry for 3 minutes, add mushrooms, fry for 3-4 minutes.
  • Pour in the alcohol and let it half evaporate. Pour in broth, bring to a boil, pour in cream, add parsley - mix thoroughly, salt and pepper. Place the meat and heat it in the sauce. Serve immediately.
