Ingredients

Beef (corned beef, canned or fresh) 300 g

Beet 300 g
Pickled cucumbers (small) 90 g + for decoration

Cooking method

  • Labskaus is an ancient dish of Scandinavian sailors (the ingredients can be easily found on any ship). In different versions of the translation, the name is interpreted as "a good bowl", "bubbling", as well as "a dish for strong guys."
  • About three hundred years ago, when it was first prepared, the dish was a chowder. Over time, it has evolved into a hot meat dish. A special touch of this dish was given by corned beef, which was cooked with juniper berries. In a modern version, corned beef may not be added, doing only with fish. Despite the appearance (not quite elegant), not only ordinary sailors, but also the commanding staff could eat Labskaus. Today this unusual dish can be easily found in restaurants in Northern Germany.
  • Hamburgers regard labskaus as an exclusively German seafood dish.
  • So, let's try to bring the recipe to life ...
  • 1. Originally used in beef corned beef Labscaus. In modern times, you can easily replace it with canned beef or just boil it. I used boiled.
  • 2. Beets are used pickled or boiled. I boiled beets in their skins with the addition of sugar, bay leaves and cloves.
  • 3. Potatoes are boiled in their skins.

  • 4. The meat is minced (using a meat grinder or blender) and fried on lard. I used smoked bacon: cut into pieces, melted and set the cracklings.

  • 5. Then add chopped cucumbers and onions and fry again for about 5 minutes. Add a little brine - 50 grams and 100 grams of broth.
  • 6. Peel the herring until fillet. You need to leave a part for the herring rolls. They are called rollmops (the roll looks like a pug's face). I cut some herring along the belly from the inside so that the roll can be rolled comfortably. Cut off the ponytails from two halves. I cut the remaining files along. Thus, it turned out 4 rolls with corneshon inside (this version of the rollmop is also found in some sources).

  • 7. Now it's time for potatoes, herring and beets. Potatoes can be crushed, beets (leave a little for decoration) chop in a blender. Finely chop the trim and tail of the herring. Add all 3 components to the pan and simmer a little. Labskaus is ready.

  • 8. Warm Labskaus is laid out on a plate. Fried eggs are placed on top. Next, they are decorated with pieces of boiled beets, pickles and rollmops.

I never thought that I would have a chance to fry salted herring in lard .... But here! Quite successful! In the puree itself, the herring is not clearly audible. In general, the dish is unusual, satisfying and independent - meat, fish, fried eggs, and vegetables at once - nothing can be added

Unusual and original. Nda, but this is definitely not Russian cuisine, it looks good, but I won't dare to do that, herring and meat in one bottle is too much for me.
